Tacos in Pasta Shells

Love it! I make this all the time. I make taco seasoning from this site and use that instead of the suggested spices. I also use salsa instead of taco sauce and the full block of cream cheese. Bake for 15 minutes. Quick and easy. For 1 lb. of beef, I use 10 shells. Yummy!

Moist, Tender Spice Cake

Amazing! I love spice cake and this was great! Instead of 1 cup of butter, I used one stick (1/2 cup) and 1/2 of applesauce. I don't like ginger so I did not include it.

Outrageous Chocolate Chip Cookies

Amazing! There are just a few things that I love more than chocolate and peanut. I used natural peanut and about 1/4 extra oats. These were amazing and I love the fact that there are oats. Next time I might try to sneak in some whole wheat flour. I didn't get 18 cookies because the dough is equally tasty!

Pancakes I

This is my go to recipe for pancakes. So easy. If I double the recipe, I use applesauce in place of oil. If I don't double I don't add the oil. I also use 1/2 whole wheat flour, 1/2 white flour. Super easy and my family loves them!

Shrimp and Broccoli Packets

LOVED! I did make a few minor changes, used a popular cajun seasoning because I didn't have seafood seasoning. I use the Puerto Rican rice recipe on here and added it to the foil packets when the liquid was almost gone. 1/4 cup of water and on the grill for 20 minutes. I'm going to try different flavors like lemon pepper with lemon slices.

Grilled Shrimp Tacos

I loved this meal but I did make several changes. I diced jicama into sticks and added grilled zucchini and mushrooms instead of the salad. I also made my own sauce - one tablespoon low fat ranch and three tablespoons salsa. I also made my own tortillas from a recipe of this site. LOVED!

Super Sausage Gravy

My husband used to say that my father in law made the best gravy but now this is the best. I use skim milk and reduced fat sausage and you can't tell a difference.

Original Homemade Italian Beef

I make this at least once a month. I use two packages of Italian mix and I put the jar and juice in the beginning. I use a pressure cooker and put it in for about an hour. I toast rolls brushed with olive oil and garlic salt. Amazing!

Chorizo, Potato and Green Chile Omelet

I made this for Christmas morning and it was really good. I had never had chorizo before but I wanted to try something new. I bought liquid egg whites instead of using 8 egg whites. It was good as a left over as well.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

This was super! I used 1 lb. of ground turkey, 1 cup of salsa and I used 1/2 cup of Masa (used to made corn torillas) for cornmeal. I used the leftovers to make a SW omelet. I used about 3/4 cup for a 3 egg omelet. It was AMAZING!!

Restaurant Style Chicken Nachos

My husband and I crave these and he is normally a beef man. They are so good and easy. I season my chicken with garlic salt, pepper and cumin and grill or saute in a skillet. I make Bob Cody's Guacamole to go with these and they are better than any restaurant's nachos!

Baked Potato Soup

I have been making this soup for several years and it tastes restaurant quality. I have a few modifications, I leave the skins on the potatoes and use fat free 1/2 and 1/2. Tastes great!

1-Dish Taco Bake

I really liked the flavor and I also added a can of chili beans as many others have. I doubled the recipe but next time I will only use one packet of yeast. There was a little too much crust for us. I also used the taco seasoning recipe on AR and I think it makes it taste so much better.
