Snickerdoodles III

These cookies are wonderful! Soft and moist. The snickerdoodles recipe I usually make requires shortening and I was out. I use a tablespoon and drop it in the sugar/cinnamon and then roll them since the dough is a little sticky. This will be my new go to recipe.

Easy Garlic Broiled Chicken

This is a go to recipe for a quick but yummy week night dinner. I use 3 tablespoons butter and 3 tablespoons olive oil instead of all butter. There is plenty of extra to baste with. I serve it with rice and veggies.

Baked Potato Soup

I have been making this soup for several years and it tastes restaurant quality. I have a few modifications, I leave the skins on the potatoes and use fat free 1/2 and 1/2. Tastes great!

Original Homemade Italian Beef

I make this at least once a month. I use two packages of Italian mix and I put the jar and juice in the beginning. I use a pressure cooker and put it in for about an hour. I toast rolls brushed with olive oil and garlic salt. Amazing!

Tacos in Pasta Shells

Love it! I make this all the time. I make taco seasoning from this site and use that instead of the suggested spices. I also use salsa instead of taco sauce and the full block of cream cheese. Bake for 15 minutes. Quick and easy. For 1 lb. of beef, I use 10 shells. Yummy!

Real Italian Calzones

I have made the calzone once and it was tasty. I used turkey pepperoni, mushroom, bell pepper, ricotta and parm cheese. It was yummy. I have used the dough twice to make a breakfast calzone with egg, cheese and sausage. Amazing. The dough is very versatile.

Aunt Anne's Coffee Cake

I have made this several times and have made it for others as well. Everyone seems to enjoy it. The first time I made it, I made the crumbs too fine but after that I learned to leave in chunks. I also use a little bit of whole wheat flour (3/4 cup) for the fiber. Tastes good either way! I make mine in a bundt.

Southern Peach Cobbler

Tasted good but as my husband said, it was missing a layer of crust. I had to bake for over an hour and it was still runny. There was lots of butter with the juice. I added vanilla bean ice cream to the juice and it was good, just not a traditional cobbler.

Moist, Tender Spice Cake

Amazing! I love spice cake and this was great! Instead of 1 cup of butter, I used one stick (1/2 cup) and 1/2 of applesauce. I don't like ginger so I did not include it.

Outrageous Chocolate Chip Cookies

Amazing! There are just a few things that I love more than chocolate and peanut. I used natural peanut and about 1/4 extra oats. These were amazing and I love the fact that there are oats. Next time I might try to sneak in some whole wheat flour. I didn't get 18 cookies because the dough is equally tasty!

Pancakes I

This is my go to recipe for pancakes. So easy. If I double the recipe, I use applesauce in place of oil. If I don't double I don't add the oil. I also use 1/2 whole wheat flour, 1/2 white flour. Super easy and my family loves them!

Shrimp and Broccoli Packets

LOVED! I did make a few minor changes, used a popular cajun seasoning because I didn't have seafood seasoning. I use the Puerto Rican rice recipe on here and added it to the foil packets when the liquid was almost gone. 1/4 cup of water and on the grill for 20 minutes. I'm going to try different flavors like lemon pepper with lemon slices.

Grilled Shrimp Tacos

I loved this meal but I did make several changes. I diced jicama into sticks and added grilled zucchini and mushrooms instead of the salad. I also made my own sauce - one tablespoon low fat ranch and three tablespoons salsa. I also made my own tortillas from a recipe of this site. LOVED!

Slow Cooker Latin Chicken

Super Sausage Gravy

Fluffy French Toast

This is the best French toast recipe I've made and my go to recipe. Much better than just eggs and milk. The flour makes the mixture thicker. Thin bread (low calorie) soaks up the liquid really quickly.

Boiled Bagels

The bagels tasted fine but there is another homemade bagel recipe that is so much easier and quicker to prepare. I prefer the ingredients in this recipe as it doesn't require milk or butter but the preparation in the other.

Chorizo, Potato and Green Chile Omelet

I made this for Christmas morning and it was really good. I had never had chorizo before but I wanted to try something new. I bought liquid egg whites instead of using 8 egg whites. It was good as a left over as well.
