About this Cook
I grew up in a very small town and learned to cook when I was in the 8th grade from my Home Economics teacher. From then on, I have just loved to cook. I enjoy cooking for my husband and our 3 children and really look forward to having company over so I can treat them all to a great meal. I enjoy gardening and growing our own foods so that we can have fresh vegetables throughout the summer. I love to can our favorite things, too. Cooking is also something I really enjoy doing with friends whenever there's a club or something to join. It's a great time!
My favorite things to cook
I absolutely love cooking Italian foods. I love sauces with pastas and being able to taste the ingredients that are within the recipe. I also love to cook Mexican foods and my favorite is probably pork verde enchiladas with home made chips and salsa.
My favorite family cooking traditions
In our home, we love to have certain foods for certain holidays, like Prime Rib for Christmas, Turkey for Thanksgiving and lots of deviled eggs for Easter! Some of the things that I do to make those traditions fun and memorable are to take time and prepare things from scratch. I don't take shortcuts! My daughter has become quite the cook herself, so now I can leave desserts up to her and concentrate on the main meal. It's a great relief!
My cooking triumphs
I'd have to say that having Allrecipes contact me about doing a webcast in my own kitchen was pretty amazing! I had to decline because my kitchen was embarrassing, but it's remodeled now and beautiful, so I'm just waiting for another call... (hint, hint)
My cooking tragedies
I would have to say that my biggest tragedy is a complete nightmare! Something I made for about 250 people was left out and unrefrigerated for several hours before it was to be served. I had left it in the hands of others while I was at work but they weren't able to attend to it until a later time than planned. The food spoiled and it made so many people sick. It wasn't my fault, but of course, they asked who made it and it was me...so I took the fall. I was humiliated and upset that the whole ordeal had happened, because just before it was to be served, I took the lid off the pot and noticed it was foamy and told the leader that it didn't look right. They decided to serve it, anyway. Oh, how I regret that day! Aside from that, really, the worst thing I can think of is having my noodles stick together when I used a microwave pasta cooker. I've been pretty lucky when it comes to cooking :)

Whole Wheat Honey Bread
I love this recipe. I've been making lots of whole wheat breads lately and for sandwiches, this is the best bread. I did alter the recipe a little bit, though. It's great, don't get me wrong...but for deli sandwiches, it's just a bit too sweet. So, when I make this bread for sandwiches, I triple this recipe to make 3 loaves and only use 1/3 C honey and add 2/3 C water more. I also add 1 1/2 T wheat gluten per C whole wheat flour. It's wonderful...give it a try!

Microwave Mississippi Mud Cake I
I have never had Mississippi Mud Cake, but I was looking for a microwave chocolate cake and this came up. It looked good, so I tried to make it. I followed the directions, but what I made did not look like the picture at all. The cake was more like a brownie and did not rise at all. The flavor was a bit too buttery, but it was alright. The frosting was not dark at all, like the photo. It was too thin and ran right off of the cake. My sons ate it, and I would make it again as a quick brownie but I think I'd try less butter, for sure, and pre-made frosting. It was so rich, I didn't even finish one slice, which was 1/8 of the cake. I was expecting a cake.

Mom's Zucchini Bread
This is wonderful bread! I did substitute 1 C applesauce for the oil and the bread is so good, my kids will not leave it alone. I do leave out the walnuts. I have made about 14 loaves so far and none of it has made it to the freezer. With all the zucchini in my garden, I actually triple the recipe and bake 7 loaves at a time. I'm at 4200 ft. elevation and it takes about 1 hour to 1 hour 10 minutes until it's done. It's great bread to give to my friends, too. They love it! Thank you for such a wonderful recipe :)
