Strawberry Cheesecake

This is the first time I have made this cheesecake I took this to my friends for a dinner, they are caters. I got rave reviews from everybody. I followed other people suggestions. I only used two big eggs to avoid an eggy flavour. I also did the water bath method others had suggested and only cooked for 30 minutes and then turned the oven off. I left the cheese cake in until the morning. The sides came away. Perfecto! I am in New Zealand and used Malt biscuits crushed 2 cups and a little more butter to make it bind. I also used a peach and passionfruit (drained seeds) puree YUM! The slight crack was when I was transfering the cheesecake to the plate. User error. This is definately on my to do list again. If you want to impress do this.

Pesto Cream Sauce

Divine!!! I changed this recipe to suit what I had in the cupboard. I omitted the shrimps, used granulated garlic and used the tomatoes I had. This was wonderful and would be quick and perfect to make when visitors pop in, very filling. I will definately be using this again.

Lemon Cranberry Muffins

The perfect muffin recipe. Quick and easy to make and tasty. They are light. I changed the recipe a little, I used lemon juice about 1 teaspoon concentrate. A great way to use my fresh cranberries.

Super Easy Scones

This recipe should read 3 C SELF RAISING FLOUR. If you use this and have some flour to add if the recipe is too sticky. Then it is quick and works. light fluffy. All the flops are because there was no baking powder in the recipe. Trust me I use the recipe with self raising and get asked for the recipe all the time.

Hokey Pokey Biscuits/cookies

These are tasty, the biscuit is still soft when I took it out of the oven but harden on cooling.
