Chicken and Onions Over Linguini

Reviewed: Jan. 27, 2014
My son looked at his plate and you could see he wasn't too happy. He likes his food very straightforward. Luckily, he's a teenager and always hungry, so he tried it. He ended up having second helpings. The whole family liked it. It was simple, tasty, and a great way to stretch chicken and help out the family budget.

Slow Cooker Turkey Breast

Reviewed: Dec. 1, 2013
Don't feel tempted to add any liquid at all to this. It's completely unnecessary as the breast alone will produce more than enough juice to make gravy, and to turn out very moist and tender turkey. The only changes I made were to rub butter on and under the skin of turkey, and I used my own blend of seasonings. Cooking the breast upside down really helped keep it moist. Making the gravy was a snap. Definitely recommend.

Slow Cooker Green Bean Casserole

Reviewed: Dec. 1, 2013
I was asked to bring this to my husband's family's get-together, and panicked when our oven broke. Luckily I found this recipe. Although I had worries about this turning out soggy, it didn't. It was perfect. I just brought the extra french fried onions along to the hosts' home, popped it in their oven for a few minutes and served. It was a hit!

Sunny's Creamy Chicken Pork Chops

Reviewed: Dec. 23, 2011
This recipe was bland and unpalatable. I followed it exactly, but maybe I did something wrong. My husband usually compliments everything I make, even on those few ocassions that dinner is just average. No one liked this. Sorry. :-(

Mini Meatloaves

Reviewed: Dec. 10, 2011
I did not have oats (or even breadcrumbs) so I held the meatloaf mixure together with two beaten eggs. It worked quite well. Also omitted brown sugar because I didn't have that either. Added onions and a dash of red pepper flakes. Lastly, made an indentation in the center of each individual meatloaf and poured steak sauce in it before baking. Very tasty and easy!l

A Good Easy Garlic Chicken

Reviewed: Nov. 17, 2011
When you are short on time, this is a quick and very tasty recipe. I went heavier on the spices and used jarred garlic, and garlic pepper instead of powder. UPDATE: Found this recipe again on 3/9/14. This time I used real onion and real garlic, and it made a huge difference. I also made a sauce out of the pan drippings and some chicken broth and a little butter, using heavy cream as my thickener to keep the dish low carb. It was very, very good this time.

Marinated Rosemary Lemon Chicken

Reviewed: Jun. 19, 2010
So much flavor with just a few ingredients! I did like this very much, but could not give it five stars because, though we like lemon a lot, as written, this marinade is noiceably too lemon-ey. One of my kids asked me why his chicken tasted kind of like pie! That being said, he did eat every bit of his dinner, and then some. My chicken marinated for about seven hours, and like other reviewers I added more rosemary and some garlic into the mix. I then cooked it on a foreman grill. The result was so tender, tasty and flavorful that I couldn't believe how quick and easy this recipe was. The next time I make this, I'll just use half the amount of lemon juice.

Chicken Scampi II

Reviewed: Jun. 18, 2010
I have made this several times and am just getting around to reviewing it. Delicious! I diced up two small tomatoes and an onion and added them into the mix. Also used italian spice, red pepper flakes, and more garlic, salt and lemon. Don't forget the parmesan-romano at the end!

Herbed Salmon

Reviewed: Feb. 23, 2010
So simple yet flavorful. I followed the directions exactly, except for adding a little salt and pepper. My whole family loved it. My son, who originally did not even want to taste salmon, ended up having two pieces! I'll definitely make this again.

Slow Cooker London Broil

Reviewed: Nov. 1, 2009
The tomato soup added a taste that was unusual, but surprisingly good. The only changes I made were adding a good amount of black pepper to season the meat, and instead of using dry onion soup mix, I peeled a red onion and layered the slices on top of the beef. Some other reviewers said the meat came out tough. Not sure why unless it did not cook long enough. My london broil came out fork tender after about 7.5 hours.

Italian Chicken Marinade

Reviewed: Oct. 15, 2009
Per other posters, made a few minor adjustments: poked holes in the chicken to let the marinade soak in, used fresh minced garlic, added a little dash of red pepper flakes, and marinated only about 5 hours. Also used the oven instead of the grill to cook the chicken. Came out very tender with very nice flavor. I'll be making this often.

Baked Tilapia in Garlic and Olive Oil

Reviewed: Oct. 15, 2009
I could not believe something so easy to prepare turned out to be so delicious. It was very well received, and I'll definitely be making this often. I did add a little sea salt.

Garlic and Tomato Tilapia

Reviewed: May 28, 2008
Beautiful on the plate and very tasty. I used diced plum tomatoes, and, per some other suggestions by reviewers, added a little more garlic, chopped red onion and basil to this recipe. Before I baked the tilapia for the first ten minutes, I seasoned it with just a little sea salt and a good amount of fresh ground black pepper, then drizzled just a little olive oil over it and a tiny bit of butter. This was delicious. My only suggestion would be to be sure you are liberal with your spices when you make this. Thanks for a great recipe!

Baked Ziti I

Reviewed: Jan. 13, 2008
This was delicious, even with the meat ommitted. I did make a half sour cream/half ricotta mixture (rather than all sour cream), added two cloves of garlic, and added some italian seasoning with red pepper flakes to the spaghetti sauce. The sour cream really is what makes this baked ziti special. I'll be cooking this again and again!

Easy Tilapia with Wine and Tomatoes

Reviewed: Oct. 24, 2007
Maybe I did something wrong. I chose this recipe based on the rave reviews, but it turned out just average for me. Except for adding chopped red onion and (like some other reviewers), cooking the fish in the oven, I followed the directions as written. I like tilapia, so it tasted fine, but it was not especially flavorful. In the future I'll go back to my favorite tilapia recipe: Easy Baked Tilapia submitted by FMCNerney.

Juicy Roasted Chicken

Reviewed: Sep. 7, 2007
WOW! This chicken was SO easy to prepare, very moist, and VERY flavorful. I won't roast a chicken in any other way in the future. Few small changes: I lightly buttered the skin of the whole chicken first. Also, since I had no onion powder, I used garlic salt instead with great results. Lastly, I put half a red onion, and a few cloves of garlic in the cavity with the celery. Delicious recipe. Highly recommended!

Tomato-Egg Scramble

Reviewed: Sep. 7, 2007
This was fast and easy to prepare, and very delicious. I only changed one thing: rather than serving it over toast, I served it over a tortilla that I heated in just a tiny bit of olive oil until just crispy. Very flavorful.

Roast Pork Loin Chop

Reviewed: Aug. 27, 2007
This was easy; great for a weeknight/after work and school meal. I marinaded the pork the night before, and added hot sauce to the water to give the dish some extra flavor. Pork came out nice and tender. Very good.

Easy Baked Tilapia

Reviewed: Aug. 25, 2007
Very easy, flavorful, and cost-friendly! This would be a good dish for someone who is either new to eating fish, or is not usually a fish lover, as tilapia is very mild. For those of us who love fish, it's very good. I took suggestions from other reviews and made the following small changes: used frozen but slightly thawed fish and veggies, coated the fish with just a little olive oil and butter, added fresh garlic, and used recommended spices liberally and added a couple of other spices as well. Lastly, I sprinkled bread crumbs on the fish for the last ten minutes of cooking, and left the dish uncovered for that length of time as well. Very tasty.

Deer Chop Hurry

Reviewed: Oct. 31, 2006
We really liked this. I used hot and spicy ketchup, and since I was very low on onions, I also mixed in garlic. Didn't have onion soup mix either, so I used garlic and herbs soup mix. Very tasty!
