Caldo de Res (Mexican Beef Soup)

Reviewed: Oct. 24, 2010
I made this as written and it was delicious. In the future, because I will make this again, I will use a bag of frozen corn instead of on the cob. I will use 1/2 the cabbage and cut it and the zucchini into smaller pieces. I will double the cilantro added to the soup, add additional stew meat, and 2 packets sazon. Wow, I know it seems like I am changing alot but really these changes will not alter the flvor of this delicious soup. It will make it less messy to eat and my son likes extra meat. Thank you for sharing a great soup.

Very strong rum flavor. Next time I will use light brown sugar and omit the rum.

Hungarian Mushroom Soup

Reviewed: Oct. 24, 2010
So delicious. Thank you for sharing this recipe. I made a few changes according to the suggestons of reviewers. They were to use a variety of mushrooms, including reconstituted porcini (including the liquid) I used 1/2 and 1/2 . Added minced garlic when onions were finished and then added a splash or two of sherry. I also substituted worcestshire for the soy. I also doubled the recipe and am glad I did, lol

Pineapple Upside-Down Cake V

Reviewed: Apr. 20, 2007
Turned out perfect. I made this for Easter. Based on other reviewers suggestions I made the following changes. I used Pillsbury Golden Yellow Cake mix, substituting reserved pineapple juice for the water. I Started with a fairly thick layer of butter on each cake pan. I used fresh pineapple for the rings, and a full 20 oz. can of crushed pineapple for the bottom part ( well drained). I reduced the coconut to a sprinkling. I increased the amount of brown sugar, just sprinkled on top of the butter until it looked right. After inverting the top cake I put the pan back on until the cake cooled. Also it took longer for the top to cook than the bottom. The bottom was done in 30 min and the top took about 40 min. Thanks for the recipe. Will be making again.
