Applesauce Meatballs

Reviewed: Jul. 28, 2006
The meatballs did not hold together very well, although dusting them with flour did make them brown nicely. The taste was very bland also. Would not recommend this at all.

Ground Beef and Sausage in Red Beans and Rice

Reviewed: Jul. 31, 2006
This recipe was very good. I made a lot less and instead of using kidney beans, and pinto beans, I used a can of mixed beans. I took the hint from other reviewers and added water and some more seasoning. This is a very healthy recipe and much enjoyed, especially leftovers!

Ground Beef Mexican Style

Reviewed: Aug. 6, 2006
This is a very fast satisfying meal similar to hamburger helper. We added some extra salsa and a bit of chili powder to give it an extra kick though. Leftovers were excellent!!

Caribbean-Spiced Roast Chicken

Reviewed: Aug. 7, 2006
This chicken was very moist and juicy. The skin browned very nicely and I couldn't resist eating a small amount of the skin. Smells absolutely amazing as it cooks. This is an absolute winner.

Weekend Brunch Casserole

Reviewed: Aug. 15, 2006
We loved the ease of this hearty meal. I did add 2 more eggs and a little extra milk since l also added more sausage since we really like sausage. My husband and I enjoyed it and next time will try adding onion and some green pepper. We found this very filling and looking forward to lookovers.

Cuban Goulash

Reviewed: Aug. 17, 2006
Do not let the ingredients put you off on making this extraordinary dish. This was fantastic, the sauce was delicious, the bananas gave it a nice touch. I did add a 28oz can of tomatoes as one reviewer said it could have been saucier and I am glad I did. We served it over egg noodles and it was a perfect meal. Thanks for posting this one.

Beef Peach Pie

Reviewed: Aug. 18, 2006
This was the best meatloaf recipe I have come across. It is very moist and the sauce compliments the peaches and meat. I used fresh peaches and we did not find it overly sweet. My husband went back for seconds. A great recipe and I highly recommend it.

Pizza Casserole

We didn't think it had much of a pizza taste but it was a different casserole with using pepperoni.

Confetti Chicken

Reviewed: Aug. 25, 2006
The topping was a nice touch on this casserole but as a whole we found this to be quite bland. If this much work was going to be put in a casserole I would rather make chicken pot pie.

Honey Ribs

Reviewed: Aug. 28, 2006
These ribs were fantastic and the sauce was great, even over cauliflower!! We did find the sauce a bit watery, so next time l make these l think l will cut back on water and add more barbecue sauce. The meat just falls off the bone and is very tender. What a easy recipe. Thanks for sharing.

Ham Hash With Sweet Potatoes & Thyme

Reviewed: Aug. 31, 2006
This was very good and very colorful using both kinds of potatoes. I did precook the cubed potatoes just a bit before I added them to the skillet since we do like our potatoes soft. I am not a fan of dijon mustard but I couldn't even tell it was in there.

Scrumptious Salisbury Steak in Mushroom Gravy

Reviewed: Sep. 4, 2006
We enjoyed these patties immensely. They were very filling without adding breadcrumbs as a filler as most recipes do. There was lots of gravy and was great with mashed potatoes. My new favorite way of making hamburgers!!

Sophie's Zucchini Bread

Reviewed: Sep. 6, 2006
This is a very nice moist loaf. I made the changes recommended by other reviewers, to replace 1/2 of the oil with 1/2 cup applesauce, using 2 cups whole wheat flour and 1 cup white flour. Since I did not have quite enough zucchini I made it up with grated carrots. The only thing I did have to watch is how I poured it in my pans, try to measure half into each loaf pan. I also found it helpful to grease the pans. This is one of the nicest tasting zucchini loaves we have tried though.

Easy Garlic Chicken

Reviewed: Sep. 7, 2006
This was a very tasty chicken recipe and very quick. I thought the garlic would be overwhelming but it wasn't. The bread crumbs made a tasty coating and it kept the moisture in. I did not add the leftover breadcrumbs though, that would have been too much.
