Famous Pork Chops

Reviewed: Mar. 28, 2011
Soggy breading and not enough taste either. I also found 3 eggs was too much, 2 would do. Butter was overpowering so that would have to be cut way back. Burned to the pan so I would suggest spraying Pam on your baking sheet. Disappointing recipe as written.

Asian Beef with Snow Peas

Reviewed: Mar. 22, 2011
The flavor was good, not great, still missing something. The sauce wasn't enough so I would suggest doubling it. I did add a japanese mix frozen vegetables to this along with the snow peas.

Slow Cooker Pork Chops II

Reviewed: Feb. 26, 2011
I actually had to double check this recipe for the amounts of spices seemed too much. I read some of the reviews and since everyone agreed that it was way too oily I cut that to half the amount. Still was way too much, next time I think I will only add about 1 tbsp. The pork chops did turn out nice and tender, still a bit bland for the amount of spices but maybe the oil amount took away from them flavoring the meat. I will try again though since it was super easy to do and I had all the spices.

Roast Pork with Maple and Mustard Glaze

Reviewed: Feb. 26, 2011
Wonderful glaze. I do not like dijon mustard but still used the amount called for as hubby does like that style of mustard. It is not an overpowering mustard taste, just enough to enhance the glaze. Definetly use real maple syrup as I think the commercialized brands would make it over sweet. Leftovers made great sandwiches.

Pasta Primavera with Smoked Gouda

Reviewed: Feb. 24, 2011
Hubby complained about no meat but still enjoyed this dish. There was just enough "heat" for our liking. The smoked gouda definetly made this dish very nice.

VanVoorst Ham Casserole

Reviewed: Feb. 20, 2011
We liked this casserole and yes, you can taste the mustard a little bit but we didn't find it overpowering as others stated. Maybe it helped that I made this up the day before and cooked it the next day. Great way to use up leftover ham and stretching it for another complete meal.

Mother's Ham Casserole

Reviewed: Feb. 15, 2011
I am not a big fan of ham but this was a very good casserole. I omitted the celery as I ran out and I was low on milk so used 1 cup milk and 1/2 cup 18%bf cream. I had some leftover green peas and threw them in also. I cut back on the salt but doubled the pepper. I added a bit more cheese than the recipe states also. Did away with the break crumb topping and didn't miss it. I will be doing this recipe again.

Meatloaf Roll

Reviewed: Feb. 12, 2011
Tastes great and a very firm loaf so its filling but the amount of work involved was time consuming. This also meant for a lot more dishes to wash :( Hubby really liked it for sandwiches though since it holds its shape better than most meatloaves. I couldn't find creole seasoning in the grocery store so I used the adobe seasoning I made up, also found on this site. Don't be put off with the amount of sauce it makes because once in the oven it will thicken.

Banana Muffins II

Reviewed: Feb. 12, 2011
Really nice muffins, a little crispiness on top and soft inside. As other reviewers I added 1/2 cup chopped pecans and 1 tsp vanilla and used 1/4 cup packed brown sugar and 1/2 cup white sugar.

Hawaiian Beef Casserole

Reviewed: Feb. 9, 2011
I wasn't quite sure on the combination of kidney beans with pineapple when I read this but decided to go for it. This was very tasty and not overly sweet, turned out a little like a hawaiian chili. Delicious served over rice.

Slow Cooker Scalloped Potatoes with Ham

Reviewed: Feb. 2, 2011
I read some of the reviews on this before I made so I did a little bit of a change. I used milk in place of water and I did it with seasoned and browned pork chops. This smelled great while cooking and the pork chops came out nice and moist. The only thing I think I will pass on when making it next is the cheese as we found it didn't really enhance the flavor.

Grandma Earhart's Pepper Pot Casserole

Reviewed: Feb. 1, 2011
This was a hit with the whole family even without having the cheese to sprinkle on top. I left out the celery since we are not big fans of it but I did add some fresh minced garlic with the onion. I also used fresh mild italian sausage and for those who like things spicier use a spicier sausage. It was a fast meal and served with a salad made a complete meal.

Ann's Dirty Rice

A new family FAV. I made it exactly as written and it turned out great. I think maybe I could even skip the uncooked rice and just add some leftover cooked rice when its handy. Loved how quickly this served up

Marinated Grilled Shrimp

Reviewed: Jan. 19, 2011
I was worried about the amount of cayenne pepper but needlessly as it turned out amazing. I also didn't have fresh basil so had to substitute with dried. I also let this marinade over night and the flavors blended nicely. I didn't even bother with the skewers, just pan fried in a non stick skillet. YUMMY!!!!!

Used a little less dill as other reviewers suggested but I should have thrown in a bit more salt and some pepper too. I had some niblet corn leftover so I threw that in also.

Despite not having the green onion and using picante sauce in place of salsa this turned out well. Crispy on the outside but moist on the inside.
