Chocolate Caramel Brownies

I don't know if I did these the way they were written because when I mixed just the cake mix with the ingredients called for I decided there was no way the batter was going to cover the 9x13 pan called for. I decided that maybe the recipe meant I was to prepare the cake mix as directed on the pkg and then add the ingredients the recipe called for. I did this but then realized that it was more like cake batter when pouring over top instead of being able to pat the batter to cover the caramels. The end result was a soft chewy brownie style cake that got devoured so I didn't mind if I goofed.

Shirred Potatoes and Pork Chops

I sliced the potatoes instead of shredding because it turned out more like a scalloped potato. The pork chops turned out nice and moist but the dish did need some more seasoning than the salt and pepper called for.

Bacon Wrapped Water Chestnuts III

Can you say AMAZING. These were tasty little morsels and I served them to company who have had bacon wrapped water chestnuts before but never in a sauce. I liked the fact it didn't have many ingredients and I had everything on hand. I cut the bacon in half to wrap and put them in the oven to crisp first before adding sauce. Everyone enjoyed, no leftovers and the recipe was passed along.

Chayote Squash Side Dish

I came across this in the grocery store and thought it was interesting looking although had no idea how to cook it. This recipe was great to try it for the first time. I did add some chopped onion with the garlic and I traded the red wine vinegar for lime juice. I added a touch less red pepper flakes because I don't like anything overly spicy but next time I will add the whole amount called for or a touch more. Very tasty and hubby enjoyed it also. Will definetly buy Chayote Squash again and do this sidedish

Colleen's Slow Cooker Jambalaya

I was actually nervous about so much of the tobasco and cayenne pepper being too much in this since I am a wimp when it comes to overly spicy food but this is just the right amount. Leftovers were fantastic. Made lots, and ended up throwing in left over cooked rice into the leftovers

Sunday Chicken Dinner

This was so quick to prepare and was a great dish. I didn't have any cajun seasoning on hand so I made Traci's Adobo Seasoning from this site and it worked amazing on the chicken. I also forgot to add the oil but didn't seem to hurt. Cleanup was a breeze.

Had no clue what Adobo seasoning was but its truly delicious. I had everything to mix it up and reading past reviews decided to make the whole batch instead of only half like I was going to. I used this in the Sunday Chicken Dinner by Christina from this site instead of the cajun seasoning the recipe called for. Fantastic!!!!

Slow Cooker Corned Beef and Cabbage

Excellent meal. I served that for my company on St. Patricks Day and even the one person who doesn't normally like corned beef liked this enough to ask for the recipe so I gladly shared. I used the whole can of beer and the vegetables did not turn mushy at all. Instead of water I did half with a beef broth as another reviewer suggested. I also added 3 whole cloves of garlic and a bay leaf.

I had 4oz of cream cheese left over from a recipe and went looking for a cookie recipe and came across this one. These are so good they melt in your mouth and didn't last long at all. So easy to make without a lot of fuss.

Beef and Irish Stout Stew

This was absolutely fantastic!!! I do not care for beer but this dish changed my mind. I used Guiness and the meat was so tender. I made this exactly as written except for adding 2 tbsp brown sugar and some worcestershire sauce. I was going to add potatoes like I usually do with stews but reading reviews I decided to serve instead the Irish Champ also found on this site. I am so glad I did. Why save this delicious dish for St. Patricks's day.......make it today.

Fruity Chili

I was at first very nervous over trying this with the amount of chili powder called for but decided to go for it. This was our first encounter with a banana pepper and it was delicious in this. I even added the pinch of cayenne. I think the fruit cuts the spiciness down. Will do this chili again.
