Sweet Baby Carrots

I liked the sound of this recipe except for the crazy amount of butter so started reading reviews and found 1 that I did use by TYLERDEN. Cutting back the butter to 3 TBSP, 3 TBSP brown sugar and 1 TBSP honey with a dash of cinnamon made my sliced carrots perfect with just the right amount of sauce.

Ham and Great Northern Bean Soup

I used a ham hock which I boiled in enough water to cover it. I added the carrots, garlic, beans, bay leaves and onion to this while cooking. When the meat was falling off the bone I chopped it up, adding it back to the pot and also kept the bone in. I kept this on a slow simmer for an hour. I added the salt and pepper just before serving. We liked the soup but I think I will even try adding some diced potatoes to this.

Quick Hoppin' John Soup

Good soup but on the mild side. I made it exactly as written but added hot sauce to leftovers which was very good for the second night.

Cape Cod Cocktail Meatballs

I made the meatballs larger so I could serve it as a supper and it was very good. Very moist meatballs, sauce just had a touch of sweetness and was very good served with rice. I would definitely do this as an appetizer at a party or potluck!

Wedding Soup Lasagna

Lots of steps to this but it was well worth it! I was worried there wouldn't be enough broth left by the time I got to the step of boiling the lasagna noodles but there was. First time I have actually not overcoooked my pasta LOL! Leftovers were great and the whole family enjoyed this. Thanks for posting this very different version of Lasagna.

Apple Honey Glazed Chicken

We don't have a barbecue but this sounded too good to pass up. I baked the chicken in a 350 oven for an hour, covered, and turned the chicken over half way through. Glaze was not overly sweet and the dijon mustard taste came through nicely which I was happy with since I do not care for dijon.

Pork Chop Potato Casserole

This was good, the pork chops were moist and delicious. Hashbrowns were nice and cheesy but next time I think I will add some chopped onion and green or red pepper to them.

Simple Whole Roasted Chicken

I came across this recipe when I wanted something different to do with a whole chicken. Too late I realized the spice rub should sit overnight on the chicken but decided to go ahead and just cook it that same day. This came out very moist and tender and the skin was nicely browned and crunchy, yes I know its not healthy but I did eat some of it. I did bake this in a 375 oven in a foil lined casserole dish for about 2 hrs. as my smoke detector would have been going off way to often with the higher temperature.

Zucchini Cream Pie

Wish I could rate this higher, it is a fantastic pie! I read all reviews and finally decided to cut the sugar down to 1 1/4 cups as everyone seemed to agree the pie was very sweet. I agree it could even be cut down more but oh my this was delicious. I added the cinnamon and nutmeg to the mix and sprinkled pumpkin pie spice over the pie. My pie took almost an hour baking to almost set it completely but when it cooled it was perfect. I never told anyone what the "secret" ingredient was and nobody guessed but everyone raved about how delicious it was. I will be doing this again soon LOL. I froze some of the pieces to share with others and it froze well.

Spaghetti Squash with Paleo Meat Sauce

More flavor was needed in this dish. The spaghetti squash is watery and bland and I will not buy again. The sauce made lots and I had to tweak it so I added some leftover spaghetti sauce, garlic, oregano, italian seasoning and a little salt. The sauce then worked great served over spaghetti.

Emergency Chicken

I had chicken out for another recipe but forgot to buy a key ingredient (oops) so needed something quick and delicious and found this recipe fit the bill perfectly. Served with a side salad and mashed potatoes.

Pumpkin Muffins II

I read past reviews on these before making and cut back on the spices by half except for the cinnamon which I kept as the whole amount. These are good, kept their shape nicely and would be good with some nuts. I was going to do a streusel topping but forgot and I am glad I did because the muffins rose nicely. The whole family liked them although they said I could have used the original spice amounts called for. I will be making these again using the original recipe.

Pork Chops for the Slow Cooker

These pork chops came out very tender and moist. I took another reviewers suggestion and used 1/2 cup each on the ketchup, soy sauce (low sodium) and brown sugar. Made ample sauce.
