B Muffins

Reviewed: Feb. 23, 2007
I was wrong, healthy can be delicious, lol. These were a great muffin, nice from just a plain bran muffin. Moist and flavorful, I will definetely make these again. Thanks for posting and proving me wrong.

Carrot Cake Muffins with Cinnamon Glaze

Reviewed: Feb. 23, 2007
Way too much carrot and not enough "muffin". Glaze didn't improve the taste either.

Cheesy Potatoes and Ham

Reviewed: Feb. 20, 2007
I was totally amazed at how good this recipe was since I am not a fan of ham. Very easy to throw together and since I bought a good quality ham from the local deli the flavor really came through. I added about 2 cups ham so I have a lot of leftovers. This recipe gave me a thought of adding some frozen mixed veg to the casserole, double the soup and cheese. Yummy!! Thanks for sharing this one.

Easy Raspberry Chicken with Coconut Rice

Reviewed: Feb. 20, 2007
My husband and I enjoyed this recipe, although it definetly made a LOT of rice for us. I couldn't find raspberry vinegar so I ended up using Renee's raspberry vinaigrette and it tasted wonderful. This is a recipe I will certainly do again.

Blueberry Cream Cheese Muffins

Reviewed: Feb. 19, 2007
I only rated them 4 stars out of the 5 because they did burn on the bottoms and I did use muffin cup liners. I cooked them at 350 for about 5 minutes less than the time stated. I also got 18 muffins out of the recipe and way too much filling was left over :( what a waste. My muffins did turn out fluffy flavorful and moist though. I did as another reviewer suggested and added a cup of raspberries with the blueberries and it was awesome. The cream cheese filling blended in though with the batter, don't think I would have missed it had I not added it. Maybe try that way next time.

Moist and flavorful. Not an everyday way of doing chicken but it was different.

Bulgogi (Korean Barbecued Beef)

Reviewed: Feb. 15, 2007
This was very good, loved the taste of the beef. Leftovers warmed up with some of the ingredients added as the marinade and threw in some chinese vegetables to stretch it further. Thanks for posting.

Buttermilk Potato Fried Chicken

Reviewed: Feb. 15, 2007
This was really good, the coating was perfect. Well worth buying buttermilk instead of the cheating method of adding lemon juice or vinegar to sweet milk.

Rice didn't cook as quickly as recipe stated and over all was just a terrible dish.

Carol's Arroz Con Pollo

Reviewed: Feb. 11, 2007
This was a good one dish meal but I agree with other reviewers that it lacked something. It is so close to my jambalaya that I make which I add shrimp and kielbassa too that I prefer that. Thanks anyway.

Salisbury Steak

Reviewed: Feb. 10, 2007
The meat held together very well and cooks up fast. I could not find the canned soup so used an evelope of dry onion soup mix instead and it still turned out. Gravy was great over mashed potatoes.

Chicken-Fried Chops

The gravy is really nice served over mashed potatoes but I found the pork chop a bit bland.

Black Pepper Beef and Cabbage Stir Fry

Reviewed: Feb. 8, 2007
Very quick to make meal although I did not use chinese cabbage, just the regular cabbage which I precooked a bit first. We enjoyed this dish, just enough for 2 with a bit left over for a lunch for 1.

Brown Sugar Meatloaf

Reviewed: Feb. 6, 2007
The very best meatloaf I have found so far. I did as past reviewers suggested and added a dash worcestershire sauce to the ketchup and brown sugar. I only used 1 pound lean ground beef so I cut back on the amount of other ingredients just a touch and used only 1 egg. I saw no need to grease the pan and I used half the sauce on the bottom of the pan and the rest on top of the meatloaf. This was a very moist flavorful loaf and we did not find it too sweet at all. Will definetly pass this recipe along to friends and family.

Very good and I used the multi colored spirals for a variation. As all pasta dishes this was very good the next day.

Beefy Hash Brown Bake

Fast and easy to prepare for a complete supper. We loved the crunch and the taste of using the canned onions on top. Leftovers warmed up decently in the oven also, covered with aluminum foil.

Amish Casserole

Made this dish exactly as is and we really enjoyed it. The tastes were different but blended together very well. This is an easy throw together dish and perfect for small children who are usually picky eaters. I am looking forward to having leftovers.

Anniversary Chicken I

Reviewed: Jan. 23, 2007
A good throw together meal that is a change of pace in tastes. I also would suggest adding the cheese the last few minutes, because it did burn off a bit. I also think a past reviewer had a good idea about using real bacon strips, bacon bits just get lost on top of the chicken.

Bubble 'n' Squeak

Reviewed: Jan. 23, 2007
This was a different version of the bubble and squeak I do, this one using cabbage and oh is this so good. The frying of the bacon with the onion was a tremendous start and made the whole dish more flavorful. Leftover pan fry up well the next day also and my husband didn't even complain about eating that much cabbage. Thanks so much for a great recipe.
