This recipe is similar to mine except I mix in sweet hot mustard in the egg and milk mixture and spice up the flour/cornmeal mixture before coating slices. I also combine the leftover egg and meal mix to create hush puppies made in a pan.
If the egg and meal mix is thin, then I open a box of jiffy mix and add until it's thick and drops easily into the cast iron pan. Then I turn the "pups"after about 30 seconds and smash them down cook them until they rise a bit then turn them a 3rd time. They taste simply yummy with the green tomatoes! It's a wonderful breakfast or brunch combo. Bacon, fried green tomatoes and panpuppies!
