Roasted Brussels Sprouts with Apples, Golden Raisins, and Walnuts

Reviewed: Jan. 7, 2014
I made this for Christmas dinner and everyone loved it. Since I was serving both Roast Beef and Turkey Breast (for the non-meat eaters) this was the perfect combination of vegetables. I was serving 10 adults so i adjused the recipe accordinly and used golden raisins and dried cranberries which added some much needed color. Will definately make this again!

White Sangria with Lemonade

Reviewed: Sep. 1, 2013
This was really a great recipe!Served this at a Bridal Shower and it was a big hit with everyone! Next time I would use less fruit however---there was so much fruit it was had to serve the punch!

Elegant Penne with Asparagus and Shrimp

Reviewed: Mar. 24, 2013
Very flavorful and delicious! Good contrast between the hot pepper and lemon flavors. Based on previous reviews, I added more wine to the sauce mixture to make more. The only thing I would do differently next time is to add more asparagus --- the asparagus I used was very small and, since we love it,there was not enough of it!

Stuffed Artichoke Hearts

Reviewed: Dec. 31, 2010
I used whole Artichoke Hearts instead of just "bottoms" -- simply pushed a "hole" in the top part of the choke and filled that with the prescribed ingredients. It was a big hit with the family but I personally found it very "rich" and tasted nothing but cream cheese! I would probably make it again though because it got great reviews from the crowd!

Veggie Vegetarian Chili

Reviewed: Dec. 23, 2010
This is a fantastic vegetarian dish.. I made it for a group of friends and everyone had seconds. Serve with some cornbread or a good loaf of French or Italian bread for a great meal.

Chicken Penne with Asparagus, Sun-dried Tomatoes, and Artichoke Hearts

Reviewed: May 1, 2010
This was pretty tasty but, I didn't like the shredded chicken -- next time I think I will use grilled chicken breasts and cut them into bite size slices; shredded chicken just got "lost" in the dish with all the other ingredients. Iwill also use more garlic salt next time.

Jasmine's Brussels Sprouts

Reviewed: Feb. 4, 2010
This was a big hit! I used Turkey Bacon instead of pancetta; after the bacon was cooked, I removed it from the pan and added about 2 Tblsps of chopped Shallots with the garlic and they browned nicely together and gave a little sweeter taste to the Brussel Sprouts. Will definately use this recipe again!

Zesty Stuffed Peppers

Reviewed: Feb. 4, 2010
I used ground turkey which I browned with a little vegetable oil since it does not throw off much fat during cooking. It turned out great - will definately try it again sometime.

Sunshine Halibut

Reviewed: Feb. 4, 2010
I found this a little bland and the lemon/pepper seasoning actually took away from the taste of the orange and lemon. I will try it again but will want to perk it up some.

Authentic German Potato Salad

Reviewed: Sep. 9, 2009
I've never made German Potato Salad in my life but, I was asked to bring some to a family gathering and this was the easiest recipe I found on AllRecipes---what a hit!! Everyone raved about it, two people asked for the recipe and it was all gone by the end of the party! The only change I made (to cut down on fat) was using Turkey Bacon -- but, since Turkey Bacon doesn't throw off any fat, I used about 2 TBSPs of canola oil to fry the bacon in and then had enough left to saute the onions. It was great! I might also cut down on the sugar just a tad the next time.

Cola Pork Chops

Reviewed: Jan. 9, 2009
I was plesantly surprised at how good this sauce was! I took other reviewers advice and seasoned some flour (salt, pepper, Italian seasoning) and then coated the boneless loin chops with the flour. Then I browned the chops for about 8 minutes in olive oil. I used some spray cooking oil in the baking dish (highly recomended or the sauce will take forever to clean up from the baking dish!) and put about half of a Mayan Sweet onion that I had sliced up on top of the chops before adding the sauce. The chops cooked in less than 30 minutes and the combination of the onions with the sauce was terrific. Will definately use again!

Artichoke and Spinach Swirls

Reviewed: Jan. 2, 2009
Based on other reviewers raves, I tried this one and found it to be very BLAH! I used phyllo dough instead of puff pastry however so, that may account for some of the problem although another reviewer had commented that they used phyllo dough and it was fine. I'll try it again but will definately add some garlic powder, perhaps salt and whatever else I can think of to "perk it up".

Sesame Seed Cookies III

Reviewed: Dec. 21, 2008
Rosaria, thanks for this recipe!! The cookies look and taste great. I did use much more than 3/4 cup Sesame seeds however. I also found that it was easier to divide the dough into eighths before making a "rope" -- it was just much easier to handle. Also, when I cut the rope into 2 inch pieces, I gently rolled the piece again (before dipping in milk) to get it into a shape and size that worked and looked inviting. To those who are considering making this recipe, the prep time is a little misleading --- it takes much longer than 10 minutes to get all the ingredients together and the dough mixed to the right consistency but, it wa well worth the effort!

Mushroom Meatloaf

Reviewed: Nov. 3, 2008
This Meatloaf was terrific. I used "Meatloaf Mix" (1/3 beef, veal and pork) and 8 oz sliced Baby Bella Mushrooms. Took advice of one reviewer and sauteed 3/4's of the mushrooms with onion and garlic in 1 Tblsp Butter and 1 Tblsp Olive oil before mixing in with meat mixture. Then, I put sliced mushrooms between two layers of the meat mixture before topping it off. Also used 1/4 c.Hickory Smoked (commercial) BBQ Sauce and 1/4 c. ketchup instead of all ketchup. Finally, used equal parts ketchup, BBQ sauce and Steak sauce to make 1/2 cup sauce to spread of top of loaf. Flavor was wonderful!

Onion Chicken in Balsamic Sauce

Reviewed: Nov. 3, 2008
I didn't care for this dish at all.Based on other reviewers comments, I tried using chicken breasts instead of leg quarters but, we found the sauce too overpowering and not at all tasty. You really have to love Balsamic Vinegar if you use this recipe -- I don't think I would give this recipe a second try either.

Goulash Supreme

Reviewed: Sep. 29, 2008
This is an easy, delicious and quick meal. I've made it twice now, once with ground beef and another time with ground turkey. Either way, it is quite good. With ground turkey it was a bit more "bland" so next time I might increase the chili powder and the paprika. Serve with a green salad and you have a great simple supper!

Diane's Colcannon

Reviewed: Mar. 17, 2008
This was a big hit with my Irish in-laws at our traditional Corn Beef and Cabbage Dinner for St. Patrick's Day. But, since one of the niece's doesn't eat pork (or beef), I used Turkey Bacon. I cooked it with a tablespoon of Canola Oil (since it doesn't throw off any fat) and then proceeded with the recipe as written. Fabulous --- will definately make this again!

Fast and Easy Spinach with Shallots

Reviewed: Jan. 19, 2008
I served this dish to guests along with Lamb Chops and mashed potatoes and got rave reviews. I took the reviewer Honey's advice and added butter, and mushrooms to the spinach and sprinkled with parmesan cheese and it was fabulous!

Ratatouille

Reviewed: Jun. 14, 2007
This was terrific. Easy to prepare and tasted delicious. I used sliced portobella mushrooms and they really gave it a hearty texture which we all liked. I served it to some "very vegetarian" friends and they thought it was terrific. I think when I make it again, I will add some red, yellow and orange peppers as well as green to give it some color.

Linguine with Seafood and Sundried Tomatoes

Reviewed: May 8, 2007
Like this recipe a lot; if you have a Trader Joe's in your area, I used their Frozen Seafood Mix (shrimp, calamari, scallops)instead of just shrimp and scallops (because I love calamari!)and served it over TJ's garlic & basil linguine. Served it with a salad for guests and it was gobbled up!
