Roasted Lemon Herb Chicken

Foolproof Rib Roast

I followed the recipe exactly and didn't make a single change. This was my very first prime rib and it was amazing. The table pronounced it 'restaurant worthy!

Double Chocolate Chip Bundt Cake

It wasn't as sweet as I would have liked but it was was very chocolate-y. I used regular frosting, nuked it for about 30 seconds, drizzled over the top, and sprinkled that with crushed peppermints. The cake looked very pretty.

Soul Smothered Chicken

Outstanding! There were a few changes but it was for personal taste and convenience. I put the salt, pepper, added garlic powder to the flour and put in a plastic bag. I halfed the recipe and used 3 large chicken thighs. The celery was left out but extra carrots added but next time I'll still omit the celery and skip the extra carrots. I let it cook closer to an hour and it was falling off the bone tender. I made this for a date and he had three helpings so I'll call that a hit. The gravy was wonderful over mashed potatoes. This will definately be made again.

Skillet Chops with Mushroom Gravy

I followed the recipe with a few slight exceptions. I added seasoning and added the leftover crumbs to the gravy. Overall, I thought it was good.

My Chili

Peach Bread

I know, I know...don't make changes but I did anyway. :-) I used all brown sugar, added a can of pears (drained) that I needed to get rid of, 2t of cinnamon and replaced half the oil with applesauce. Excellent bread!

Waikiki Meatballs

This is from Betty Crocker's Red cookbook and we grew up eating it. And loving it! I usually double the sauce and use whatever citrus juice I have on hand to make up the difference. For some extra veggies I toss in matchstick carrots too.

Sausage Balls

As suggested I mixed the sausage and bisquick first and there was no powder issues with the finished balls. I bought mild instead of sharp on accident but it turned out fine but next time I'll double check on the type of cheese. I baked at 350 for 20-25 minutes. Everyone raved about these and talked about how they were an 'old school' party food and how much they'd always liked them but no one made them anymore. These were also a huge hit with all the kiddos.

Texas Caviar I

I made this for a housewarming and it was a huge hit. I left out the coriander and it wasn't missed. I chopped up the cilantro when I mixed it that morning and it was fine. I know it's a dip but I treat it like a salad and eat it straight out of the bowl! :)

Easy Garlic Broiled Chicken

It was definately easy and quick. I baked it at 375 for 15 minutes on each side and then broiled it for 5 minutes. There was way too much butter for me so that will be cut back if I make again. I liked the combination of butter, soy and garlic though.

Marinated Baked Pork Chops

I LOVED this marinade...not too sweet, not too tart. I scaled it down to 3 servings for my extra large single bone-in porkchop. I cooked it for exactly one hour and it was moist enough to cut without a knife. Fantastic,

Roast Sticky Chicken-Rotisserie Style

Everyone said it was one of the best chicken's they'd had. My dad couldn't believe I hadn't injected anything because it was so moist and flavorful. I used all black pepper and used 1 large bird instead of two. I'm not really sure what the saran-wrapping does but it must work on something because the skin was fantastic.

Bread and Celery Stuffing

Gourmet Mushroom Risotto

Outstanding. I didn't have time to go get fresh mushrooms so I used end pieces out of the can. Fresh would be better but they'll do in a pinch. Everyone loved it.
