Pasta e Olio

Reviewed: Jan. 6, 2011
Absolutely fantastic! I did make a few changes though. I didn't use any oil and did 1/4 c of butter plus an extra tablespoon. I also skipped the parsley, but added some dried chives after taking the noodles off the heat. A splash of lemon juice gave it a little extra zip, and everyone gobbled it up, especially me. Lol.

Delicious! I made this for Father's Day breakfast, and it was so good! Husband loved it, and the kids loved it! Filled it with cherry pie filling, whipped cream and drizzled with chocolate sauce. Mmmmmmm!

I thought these were good, but I breaded the chicken first. Pretty basic recipe.

Balsamic Baked Tilapia

Reviewed: Jan. 31, 2010
Very tasty. We used a green bell pepper instead of red, and added a seeded and chopped jalapeno pepper for a spicy kick. We also replaced the blue cheese (ick) with shredded cheddar and only used 1/2 cup. This is a keeper.

Broiled Tilapia Parmesan

This Tilapia is so easy to make, and cooks up quickly. Tastes very good, and was a hit with the entire family. Will serve this to company. :)

Very good. I steamed them first, than sauteed with olive oil, then added the vinegar and a pinch of sugar.

Mock Strawberry Jam

Reviewed: Aug. 15, 2009
This is a soft serve jam, since it does not use pectin. It tasted pretty good, except it was a little on the sweet side. Cool thing is, since it does not need pectin, you can scale down the sugar a bit if needed. I might do 3 to 4 c. of sugar rather than 5 next time. It's a good recipe, it's a keeper for sure.

Brazilian Lemonade

Reviewed: May 3, 2009
This was way tasty. I skipped the ice (our blender can't seem to make the ice bits smaller than chunks, bleh), but kept everything else the same. I didn't end up blending it, I just mixed it till the granulated sugar dissolved. Very yummy, tasted a lot like the lemonade at Tucanos (Brazilian Grill).

Easy Microwave Chocolate Cake

Reviewed: Mar. 30, 2009
This cake is SOOOOO good! My daughter and I are wolfing it down right now! I'm going to have to make it again tonight, so my husband can try it! :) I did alter it a little. I added 1/2 c. of white sugar instead of 1/4, and 3 T. of cocoa instead of 2. I also added a handful of chocolate chips to the batter, and a large spoonful of sour cream. Yum, yum, yum!

Black Bean Pizza

Reviewed: Mar. 20, 2009
This was very good (I skipped the zucchini). The only word of caution I might add is that you want to make sure you bake it with a very tasty crust. I made a whole wheat pizza crust from scratch (trying to be healthy), and the wheat taste was too strong. It was still very good though, and I'll make it again for sure, but next time I'll try a different crust.

Easy Lemon Bars

Reviewed: Mar. 17, 2009
Very tasty. It does have a cake mix taste, but not overly so. I would make this again, though I think I'd double the filling. I also used a lemon box mix without pudding added.

Peanut Butter No-Bakes

Reviewed: Mar. 15, 2009
This was quite good. I used skim milk instead of evaporated milk (trying to be cheap), but it was still peanut buttery, and sweet. The binding was different from that of a rice crispy treat. A rice crispy's binding is "sticky" while the peanut butter one is "soft." Tasted good enough to make again, though I'd only suggest trying it if your a BIG fan of peanut butter.

I didn't care for the combination of flavors. However, I think it depends on one's taste.

Oven-Baked Chicken

Reviewed: Feb. 1, 2009
Great taste, but took off a star since the Bisquick mixture had a hard time sticking to the chicken. Next time I think I'd first dip the chicken in a mix of egg and milk.
