Coq au Vin alla Italiana

A very respectable basic recipe. I followed the recipe (although I used slightly more fresh rosemary) and used skinless/boneless chicken thighs. It was bland as published. This recipe must require a VERY ROBUST wine. In the end, I messed around with it adding small amounts of balsamic vinegar, extra garlic, and finally sundried tomatoes to give the dish more "punch." A very nice beginning for someone with a good palate to play around.

Cauliflower with Dijon Sauce

I made substantial changes but the idea of this recipe was very good. I used 1/4 cup veganaise (mayo substitute) ,1/2 C fat free 1/2 n 1/2, 1.5 TBSP dijon mustard, 3 oz shredded lite cheddar. I heated 1st 3 ingredients on stove top and added cheese. This was quite good over very well cooked cauliflower. While I'm sure the original tasted fine, I didn't want to eat that much fat and I thought this was a good alternative.

Glazed Meatloaf I

Very delicious. I didn't have beef bullion so I used beef flavored soup mix from a pkg of raman noodle. I also used regular brown mustard (1 tbsp) instead of 1 tsp of dry mustard. This is a must repeat for our family!

My Crab Cakes

We really thought these were TERRIBLE. Other than I used fresh crabmeat, I followed the recipe EXACTLY. This had way too much cracker crumb to crabmeat. They were spicy but otherwise undistiguished flavorwise. Wish I'd used another recipe.
