Bimini Bread

Makes a very small loaf. Would probably be better if the recipe was doubled and set at 2-pound light setting on machine.

Waffles I

A simple, yet good waffle recipe. The only thing I change is to separate the egg whites, whip until stiff peaks form, then fold them in at the end. It makes the waffles so much fluffier! We also love to add chocolate chips. Double the sugar and vanilla for a sweeter, richer waffle. Yummy!!

Simple Whole Wheat Bread

Very tasty whole wheat bread! The honey makes it sweet enough that it doesn't have that dry flavor so many whole wheat breads have. Will definitely be using this recipe again!

Traditional Pita Bread

A good recipe - tastes great. I must be doing something wrong though because mine didn't puff. Next time I will try rolling the dough thinner. I thought it was thin enough as all of the pitas were much larger than the 5" they were supposed to be rolled to, but I will try again and see! They were still great for dipping!

Fruit Salad in Seconds

Delicious!! I added raspberries and blueberries and used vanilla yogurt as it was all I had on hand. So good! I got lots of compliments on it at our picnic.

Iced Tea II

A simple and great way to make iced tea! Turned out wonderful! If you find your iced tea has a bit of a strong or bitter taste, add a small pinch of baking soda - this usually takes the bitterness away.

Classic Bran Muffins

Very good! I substituted applesauce for the oil and whole wheat flour for half of the white flour, doubled the recipe and made half with chocolate chips, half with raisins. They turned out great! Will use again!

Sweet Dinner Rolls

Perfection! I doubled the recipe and used my Kitchen Aid mixer for the kneading. They turned out perfect. My kids are going through them like crazy. I guess I'll be making them again soon!

Tomato-Cream Sauce for Pasta

Sooooo good!! And there's so much you can do to it! This time I added zucchini. I didn't have any cream so I used skim milk plus 2 Tbsp plain yogurt. I pureed this in the blender with half of the tomato sauce mixture, then added in some crumbly cream cheese I had, then mixed it back in with the other half of the tomato sauce so it was still a little bit chunky. Soooo yummy!!

Chocolate Chip Banana Muffins

AMAZING!! These turned out so good! I can't stop eating them! I made a couple of changes to boost the health factor. First I converted the recipe to make 24. There's no use wasting half a muffin tin. :) Then I substituted 1 cup of whole wheat flour and swapped the oil with applesauce (leaving about 1 Tbsp of oil). I also cut back on the sugar by about 1/3 cup and cut back the chocolate chips. They still turned out wonderful - not too dry and perfectly sweet! I highly recommend this recipe!!

Mama Bear's Porridge

This was really good. I'll definitely be making it again. My husband is away and I wanted a quick, easy supper for me and my kids tonight. Even though two of the three of them swear they HATE oatmeal, all 3 of them finished their whole bowl! I didn't have any powdered milk on hand so I used about 2/3 regular milk and the other 1/3 water. I added a little more liquid than the recipe listed and cooked them a little longer (I like my oats really soft and chewy though). I also omitted the raisins since 2 of my kids don't like them and served the porridge with raisins, blueberries and chocolate chips on the side so they could choose what they wanted to add (which they loved!). I'll be making this for breakfast in the near future!

To Die For Blueberry Muffins

Yummiest muffins ever!! I love them! I used frozen blueberries, but added them straight from the freezer right before spooning the batter into the cups. I didn't mix them in to the batter much as I didn't want to dye it all blue, just added a few to the top, spooned the batter into tins, added a few more, etc.

Homemade Chocolate Sandwich Cookies

I made these today with my kids - super easy and super yummy!! A no fail recipe!! They would be great with whipped white frosting in a can too. We will definitely be making these again. My only advice would be to make sure you make the cookies no bigger than quarter sized. They spread out a lot. This makes a lot of cookies!!
