Thanks, Vincenza for this wonderful recipe. I had a left-over large[had been lightly fried this previous night]chicken breast. Since there are only 2 of us, I tried your wonderful soup recipe! Since I didn't have canned chicken broth, but had 2 consentrated chicken bouillion cubes which I diluted + 1 pint of frozen chicken broth I had on hand], and 2 consentrated vegetable cubes. I used small egg noodles & this is superb & thrifty! I did saute' the veggies before adding. Update:I freeze this wonderful soup with the noodles-comes out perfectly; and also used chicken bouillion granules-just keep my freezer full for a warm, quick lunch-still think, also, the basil & oregano make it great + added IQF peas & carrots for more vegetables.Another update: has anyone thought to boil the bones of the chicken..even breasts..for more broth. I do that...great for flu-ridden friends & family. UPDATE:for those who don't have vegetable broth[none in my stores]I use dry Knorrs Vegetable Mix..just a few sprinkles. Can adjust to taste.
