Dry Rub for Ribs

Reviewed: May 28, 2006
I got this receipe for our ribs and my husband raved about the seasoning! He said the ribs were comparable to the Rendezvous Rib restaurant in Memphis, TN-the very best ever. I like a sauce so I just poured some Mesquite Bar-b-que sauce over. Delicious! Thanks, Denise

Sensational Sirloin Kabobs

This recipe is delicious. In lieu of 4 oz. of lemon-lime flavored carbonated beverage, I used tonic water with consentrated lime juice. We loved it all!

Beef Noodle Soup

Reviewed: Dec. 1, 2007
This delicious soup is great for a base to which one can add any sort of good vegetables. I call it "Ever Lasting Soup"..when I first made it I added dry linguine..too much..so I just kept adding and adding-Italian diced tomatoes, cooked baby limas, cooked kidney beans-chopped cabbage is also great. Thanks so such a great basic beef soup!

Quick and Easy Chicken Noodle Soup

Reviewed: Jan. 17, 2008
Thanks, Vincenza for this wonderful recipe. I had a left-over large[had been lightly fried this previous night]chicken breast. Since there are only 2 of us, I tried your wonderful soup recipe! Since I didn't have canned chicken broth, but had 2 consentrated chicken bouillion cubes which I diluted + 1 pint of frozen chicken broth I had on hand], and 2 consentrated vegetable cubes. I used small egg noodles & this is superb & thrifty! I did saute' the veggies before adding. Update:I freeze this wonderful soup with the noodles-comes out perfectly; and also used chicken bouillion granules-just keep my freezer full for a warm, quick lunch-still think, also, the basil & oregano make it great + added IQF peas & carrots for more vegetables.Another update: has anyone thought to boil the bones of the chicken..even breasts..for more broth. I do that...great for flu-ridden friends & family. UPDATE:for those who don't have vegetable broth[none in my stores]I use dry Knorrs Vegetable Mix..just a few sprinkles. Can adjust to taste.

GREAT. i use IQF peas & carrots. Makes it easier. Plus I also add 1-2 hard-boiled eggs, chopped-more Southern, I suppose. Poultry seasoning may also add to flavor.

Slow Cooker Chicken and Dumplings

Reviewed: Aug. 28, 2008
Delicious! Just wondering why so many people added vegetables to chicken & dumplings? That would tend to be more like a chicken pot pie! And some spoke of thickening the "stew"??? What stew? Just keep it as simple as the recipe! Next time I will use more biscuits, per husband's request. .

Souvlaki

Reviewed: Aug. 30, 2008
Update:I agree with the reviewer today-so what if soy sauce is not Greek. This is my very favorite "Greek" marinade! In fact we are having pork chops, cut to fit skewerw along with fresh squash, fresh bell pepper and fresh onion for kabobs tonight. BUT, this marinade has been delicious also with other meats! Thanks, Nobody'sGirl for such a winning recipe! ANOTHER UPDATE: I now use this marinade for roasted vegetables-any to your liking..the grill or oven. The natural sweetness of the veggies is divine!

Classic Fried Catfish

Reviewed: Feb. 16, 2009
Being a Southerner, we love farm-raised IQF catfish and this recipe is by far the very best ever! My only change was to fry in Crisco butter-flavored oil..great! Southern Living[tm]actually had more helpful hints which were:"Remove excess moisture from fish before dredging. Don't overcrowd the skillet;fry, in batches, two fillets @ a time. Bring remaining oil back to the proper temperature before frying the next batch. To keep warm, place fried fish on a wire rack with an aluminum foil-lined pan underneath;place in a 250 degree over. For a crisp testure, do not cover." Too, for those who like heat, some believe the #1 condiment is hot sauce!

Cadillac Pimento Cheese

As a Mississippian, I wouldn't have any pimiento cheese than that which is made with Velvetta Light. I "cook" mine in microwave, add lots of pimiento, a little lemon juice..adjust taste.

Delicious!Followed the recipe exactly except for 3 servings. Grilled medium -rare. Had enough leftover for next days Po-Boy sandwiches! UPDATE: Anyone who doesn't try this wonderful recipe is really missing a delicious dish! This marinade would probably be great on any kind of beef..maybe other meats, also.

A wonderful change-gourmet soup!UPDATE:I added too much dill while serving the 2 of us each day for lunch. Think it would be best to add each time, if you are keeping it a day or two.

Bacon Wrapped Chicken

Reviewed: Mar. 23, 2009
Absolutely wonderful!By mistake, I opened cream of mushroom soup, kept full amount of sauce for only two of us, Added minced garlic to cream cheese slice. As another suggested, I added a few torn spinach leaves, wine for milk, , then some dried parsley to the sauce. We have it over fettucini with sauteed spinach. Thanks so much..we are having this often!

Honey Glazed Ham

Reviewed: Apr. 13, 2009
Wow! Tried Easter on a spiral ham..didn't follow recipe exactly..just combine about 3/4 c honey, about 1/2 c. golden corn syrup, 1 stick butter, stuck some cloves here & there. Then melted all and poured over ham which I wrapped in an oven bag as one indicated[didn't work..all the juices leaked onto covered pan]-no bother, just used my baster[plactic suction thing]and basted between some of the loose slices. My new oven cooks faster than older one, so simply got it hot..and let it rest. Never tasted ham so good..and I thought I was the Queen of Ham! Thanks so much for the basic ingredients and the enjoyment you brought.
