Cranberry Pistachio Biscotti
These were super and a lot easier than expected. I read all the reviews and took notes. I had my husband chop the nuts finely for me, added the orange zest, used the chilled water for working dough (which really helped shape it quickly), made sure dough was 2" thick (it spread to about 3" to 3-1/2", put a towel over to cool slowly for 10 mins & then moved (1 log at a time) to cutting board and cooled 10 mins with wax paper underneath. Biscotti was still warm but used regular knife and leaned onto it and it cut nicely (removing from wax paper). A few broke but I was able to push together and most of them stayed. After baking 2nd time on half of them I put chocolate chips on while still hot. They melted well and then I spread the chocolate with a knife. I put them in a covered glass cake dish and they looked beautiful and sure tasted yummy with or without coffee.

Coconut Macaroons
These were easy to make and my husband loved them. I followed recipe but added a 1/4 cup more of coconut as the consistanty seemed a little runny. Also I added chocolate chips to half of the dough. I used a round scoop to make the balls so my hands would not get as messy...worked out wonderfully.
