Hot Cocoa Mix

4 stars because of the tweaks required. 5c powdered milk, 4c powdered sugar, 2c unsweetened cocoa, plus 4tbs dutch cocoa (for a darker color), 2c creamer,and 1tsp cinnamon. Overall, a nice balance of flavors; I will keep this recipe for a long time!

Eggless Chocolate Cake II

I baked these for my daughter's second birthday. There was a little boy with dairy and egg allergies attending and I wanted him to have something he could eat. These turned out beautifully as cupcakes, the rise was beautiful and the texture was great. I didn't add all the vanilla, only 1tsp and used a strong coffee in place of water. The flavor was delicious and tasted like the conventional devil's food cake recipe I usually use.

Dark Chocolate Cake I

The first time I made it, I wasn't too impressed by the taste of this cake. There was a lack of flavor and depth to the cake. The second time around I used 1 cup of chocolate milk with a cup of water. I also added a melted 4oz Ghirardelli 60% Cacao bittersweet chocolate baking bar to the batter along with using Ghirardelli unsweetend cocoa as well. The small tweaks to this recipe changed the entire cake! It turned out firm and moist and fudgy. Truly deserving the name of "Dark Chocolate Cake". I only gave it 3 stars for the original recipe but after my tweaks it was a 5 star cake!

Tuna Noodle Casserole from Scratch

This was really good! I decreased the butter and flour to 3 tbsp each for the sauce and then topped off the bread crumbs (I used panko)with a tbsp of butter, divided. I also omitted the cheese, but I think I will add it next time! Also, adding salt to the veggies as you cook it as well as to the white sauce adds more depth and flavor to this recipe rather than adding salt at the very end.

Classic Peanut Butter Cookies

DON'T bake at 375!!! Maybe my oven is just hotter but at 375 my cookies were too crispy and I only baked them for 7 mins!!! I'm going to have to play around with this recipe...

Chicken Pot Pie IX

I was going to make some chicken fried rice with my leftover chicken when I thought pot pie sounded way better. I used half and half instead of milk for a creamier taste and instead of celery seed I put a dash of thyme and a pinch of rosemary. DELICIOUS! As my husband and I sat down for dinner, he turned to me and said, "Good call on the pot pie."

Good Old Fashioned Pancakes

I love how simple and delicious this recipe is! I reduced the salt by half and increased the sugar to 3 tablespoons. I also added 1 1/2c of milk and a splash of vanilla! The tip is not to over mix and you will get soft and fluffy pancakes!

Creamy Caramel Flan

I have been making this recipe for years now and I absolutely LOVE it!!! You have to be patient with this recipe, it does take a lot of work but it really pays off! It tastes the best after you've let it cool overnight!

Spiced Sweet Roasted Red Pepper Hummus

This was the first time I made my own hummus and it was wonderful! I will never buy pre-made hummus from the store again. I doubled the batch and brought it into work and it was gone within an hour.

Golden Yam Brownies

I was pleasantly surprised by how these tasted! Even my husband grudgingly agreed that these were delicious. I would have to agree with other reviewers that these are more of a "bar" than "brownie". I also decreased the butter to 3/4 cup, only used 1/2 cup of white sugar and kept the brown sugar at a cup, and used only 3 eggs. I didn't use the glaze since I found that it was quite sweet. I will be making these again and perhaps even decrease the amount of sugar to just a cup.
