Every time I cook/bake something that tastes fabulous is a triumph for me.
My cooking tragedies
My first time cooking mac and cheese from a box was a disaster! I burnt the entire thing. I think I was in the 6th grade at the time. Then there was last fall where I decided to make a butternut squash lasagna ...all I have to say is that unless you love butternut squash, I wouldn't suggest putting it in a lasagna!

Eggless Chocolate Cake II
I baked these for my daughter's second birthday. There was a little boy with dairy and egg allergies attending and I wanted him to have something he could eat. These turned out beautifully as cupcakes, the rise was beautiful and the texture was great. I didn't add all the vanilla, only 1tsp and used a strong coffee in place of water. The flavor was delicious and tasted like the conventional devil's food cake recipe I usually use.

Tuna Noodle Casserole from Scratch
This was really good! I decreased the butter and flour to 3 tbsp each for the sauce and then topped off the bread crumbs (I used panko)with a tbsp of butter, divided. I also omitted the cheese, but I think I will add it next time! Also, adding salt to the veggies as you cook it as well as to the white sauce adds more depth and flavor to this recipe rather than adding salt at the very end.

Spiced Sweet Roasted Red Pepper Hummus
This was the first time I made my own hummus and it was wonderful! I will never buy pre-made hummus from the store again. I doubled the batch and brought it into work and it was gone within an hour.
