Crispy Edamame

Wonderful recipe! I love edamame and run out of ways to prepare them. I recommend stirring them halfway through to brown them evenly (mine stuck to the pan). I'll definitely make this again!

Chocolate Hazelnut Fruit Crepes

Oh wow, this could get me in trouble! This was my first taste of Nutella. It takes a lot of willpower not to dive into the jar! We had these with sliced bananas and strawberries. Didn't bother to heat them since the crepes were warm from the skillet. We dusted them with powdered sugar rather than whipped cream but I'll try that next time (and there will definitely be a next time). What a treat! Thanks for sharing!

Indian Chickpeas

This is very easy and tasty. I used 1 tsp. of garam masala because I couldn't find the other spice listed. Enjoyed it with naan with mango chuntey and almonds, indian-style cauliflower, indian-style eggplant, and indian-style okra (all from this site.)

Eggplant Parmesan II

There are so many variations of this wonderful recipe. I was in a hurry so I didn't even bother to bread the eggplant. I just cubed it and roasted it for about 20 minutes with some olive oil, red wine vinegar, Italian seasonings, salt, and pepper. Then I topped it with tomato sauce and a little finely shredded mozzarella and heated it through. We had it with whole wheat pasta and a Greek Salad. Here is a tip for those of you with bitter eggplants: select small, young, slender eggplants because they contain fewer seeds (the seeds can make them bitter).

Salmon Rosemary Burgers

Good recipe! I used Alaskan salmon in a pouch and whole wheat panko breadcrumbs. I had them without the bun (because I wasn't very hungry, not because I am afraid of carbs) and topped them with a little prepared horseradish sauce. Served with steamed haricot vert.

Baked Tofu Bites

These are so good! I must confess that I ate the entire batch for a snack the other night. Roasting the tofu is key here... the crispy edges are great. I wasn't crazy about the idea of adding ketchup (it tastes fine, the idea just sounds strange) so I will try these with a different marinade next time-- maybe soy sauce, sesame oil, rice vinegar, honey, crushed red pepper, and garlic. Yum!

Summer Style Chicken

This is very good! I tried it with extra zucchini and squash, Swiss cheese on top, and added Italian seasoning, salt, and pepper. I thought the squash would be mushy after 45 minutes but it was perfect. Mine came out really watery so I will probably drain the tomatoes next time. Served with garlic bread to round out a great meal.

Chicken Vegetable Barley Soup

Swan's Summer Soup

Wow! This is perfect for spring and summer when fresh tomatoes and corn are at their peak. I boiled 4 ears of corn for about 10 minutes, let them cool, and cut them off of the cob. I also used parsley instead of cilantro. This is absolutely amazing!

Fish Tacos with Tropical Fruit Salsa

Great recipe! I didn't have Jamaican jerk seasoning so I subbed cumin, chili powder, crushed red pepper, salt, and pepper. Not sure if it was the same thing but we really enjoyed this recipe. The combination of sweet mango, tart lime, and spicy seasonings was tasty.

Marinated Veggies

Excellent with Tandoori Chicken and Roasted Red Potatoes. I used less marinade and used an entire zucchini, yellow squash, red pepper, and red onion. I also roasted the vegetables in the oven (400 degrees for about 10-15 minutes until crisp and tender). Very good!

No-Cream Pasta Primavera

Wonderful meal full of fresh summer vegetables! I roasted the onions and garlic with the other vegetables to save on clean-up. I also added some leftover fresh mozzarella and chickpeas for a little more protein. Beautiful presentation and tons of flavor!

Cranberry Waldorf

I was a little skeptical about the fresh cranberries but this was actually pretty good. The vanilla yogurt tames down the tartness of the cranberries. I added more fruit which thinned out the yogurt too much. I recommend sticking to the recipe on this one.

Greek Penne and Chicken

Delicious! I used shrimp instead of chicken and cut the pasta in half. I also added 4 cups of chopped fresh spinach and wilted it slightly at the end. I also increased the tomatoes and lemon juice and added a little lemon zest.

Pizza Without the Red Sauce

Very good! I was really suprised! I sauteed a Vidalia onion until soft and golden and proceeded with the recipe. I used 3 sliced Roma tomatoes and left off the jalapeno. Nice change of pace and loaded with veggies!
