No-Cream Pasta Primavera

Reviewed: Jun. 20, 2006
Wonderful meal full of fresh summer vegetables! I roasted the onions and garlic with the other vegetables to save on clean-up. I also added some leftover fresh mozzarella and chickpeas for a little more protein. Beautiful presentation and tons of flavor!

Salmon Rosemary Burgers

Reviewed: Jul. 2, 2006
Good recipe! I used Alaskan salmon in a pouch and whole wheat panko breadcrumbs. I had them without the bun (because I wasn't very hungry, not because I am afraid of carbs) and topped them with a little prepared horseradish sauce. Served with steamed haricot vert.

Summer Style Chicken

Reviewed: Jul. 2, 2006
This is very good! I tried it with extra zucchini and squash, Swiss cheese on top, and added Italian seasoning, salt, and pepper. I thought the squash would be mushy after 45 minutes but it was perfect. Mine came out really watery so I will probably drain the tomatoes next time. Served with garlic bread to round out a great meal.

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Reviewed: Jul. 6, 2006
So good and fresh! I had this with the Fresh Asparagus Soup from this website which is also fantastic. I was disappointed to see that I was out of walnuts so I used chickpeas and croutons. I will try this again with walnuts because I am sure it is even better!

Incredible! This one blew me away. I cut back on the salt and tried with asiago cheese which was wonderful. I'll make this all summer long! Tried it with Orange, Walnut, Gorgonzola, and Mixed Greens Salad with Citrus Vinaigrette recipe on this website. It was a great meal!

I made this recipe years ago and still remember how good it was. It had a deep flavor and was so comforting... I think I had 2 or 3 bowls!

Grilled Pineapple Slices

I am not a griller so I tried these on the stovetop. I made a mess but the flavor was so good that I am going to play with the recipe. Great idea!

Barbeque Chicken

Reviewed: Jul. 6, 2006
This is a very flavorful sauce. So much better than bottled varieties. I made these on the stovetop with boneless chicken breasts. Mix sauce ingredients in a large measuring cup. In a large skillet, brown chicken on both sides. Add add sauce, bring to a boil and lower to a simmer until sauce is thick and chicken is done. Great with fried green tomatoes, roasted corn, and grilled pineapple for July 4th!

Fresh Fruit with Poppy Seed Dressing

Reviewed: Jul. 8, 2006
Brilliant idea to dress a fruit salad with a fruit sauce! I tried this with strawberries, mango, kiwi, and blueberries and loved it. I wasn't sure about the cayenne so I left it out.

Excellent! We enjoyed this with pitted chopped cherries, blueberries, and raspberries. I like a little more fruit and a little less topping but will definitely make this again.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Very light and fluffy! The wheat germ gives a great nutty taste to these pancakes. I topped them with a little leftover melted lemon curd and margarine.
