This is great! I used homemade cherry jam and sliced almonds. It was a great lunch with the Smoked Salmon and Egg Salad Sandwiches on Whole Wheat (from this site.)

Smoked Salmon and Egg Salad Sandwich

Oh, this is so good! I lightened it up a little with light Mayo and by tossing a few egg yolks out. You can play with the amounts to suit your tastes. I also added the juice of half of a lemon and fresh dill which really brightened it up. This made a great Sunday lunch with Spinach Salad with Kiwi and Strawberries (from this site).

Baked Tofu Bites

These are so good! I must confess that I ate the entire batch for a snack the other night. Roasting the tofu is key here... the crispy edges are great. I wasn't crazy about the idea of adding ketchup (it tastes fine, the idea just sounds strange) so I will try these with a different marinade next time-- maybe soy sauce, sesame oil, rice vinegar, honey, crushed red pepper, and garlic. Yum!

Fish Tacos with Tropical Fruit Salsa

Great recipe! I didn't have Jamaican jerk seasoning so I subbed cumin, chili powder, crushed red pepper, salt, and pepper. Not sure if it was the same thing but we really enjoyed this recipe. The combination of sweet mango, tart lime, and spicy seasonings was tasty.

Banana Boats

I had never heard of these before so this was a nice treat. My husband loved them. I guess I am more of a s'mores fan but these were definitely worth the effort. I had to bake them for 15 minutes to melt the chocolate.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Very light and fluffy! The wheat germ gives a great nutty taste to these pancakes. I topped them with a little leftover melted lemon curd and margarine.

Extreme Veggie Scrambled Eggs

This made a great breakfast with Wheat Germ Whole-Wheat Buttermilk Pancakes and Fresh Fruit with Poppy Seed Dressing (recipes from this site). I tossed out a few egg yolks and add some Old Bay seasoning. Very tasty!

Brilliant idea to dress a fruit salad with a fruit sauce! I tried this with strawberries, mango, kiwi, and blueberries and loved it. I wasn't sure about the cayenne so I left it out.

Barbeque Chicken

This is a very flavorful sauce. So much better than bottled varieties. I made these on the stovetop with boneless chicken breasts. Mix sauce ingredients in a large measuring cup. In a large skillet, brown chicken on both sides. Add add sauce, bring to a boil and lower to a simmer until sauce is thick and chicken is done. Great with fried green tomatoes, roasted corn, and grilled pineapple for July 4th!
