Easy Granola Bars
These were wonderful!!! I was reluctant at first because of the sweetened condensed milk, and not wanting to use so much sugar for the children, but let me tell you, the trade off was worth it. My 3 and 6 year old loved it and ate it all, asking for seconds. What a healthy treat. I used my homemade granola, which I usually make in large amounts, and contains oats, wheat germ, sesame seeds, raw cashews, peanuts and almonds, dried cherries, dates, and raisins, and used only half a cup of chocolate chips, another half of a cup I put on the bottom of the parchment lined pan, and melted in the oven prior to spreading in the granola. When done, I lifted out the parchment and let it cool on a cookie rack for about an hour, then cut into bars on the paper on a cutting board, and into the fridge to cool completely. The granola bars had a soid chocolate layer on the bottom, and crunchy gooey goodness on top! Wraped in wax paper aith kids stickers to hold closed - I will never send another store bought bar for snacks! Thanks!
