Bacon Wrapped Pineapple

This was a hit! I baked it on a broiler pan to keep the grease off the pineapples - and I baked it until I thought the bacon looked perfect. That took an extra 10 minutes, so keep that in mind. It all depends on the type of bacon you use. I plan on making this again - and again and again. Yum!

Overnight Coconut Pecan Steel Cut Oats

I made this exactly as written, and felt it to be 3 stars... Heat it for 1 minute in the microwave and it becomes 4 stars! Super easy, and makes the perfect amount. I will be making this again and trying different ingredients too - raisins would be a great addition. :)

Strawberry Spinach Salad I

The only change I made was using balsamic vinegar instead of white. This recipe was a hit -many compliments and requests for the recipe. It's definitely worth your time to give this one a try.

These were really good! The tortillas that I used were a little too small, so get the big ones if you plan on following the recipe perfectly. You could easily make double the amount of wraps if you fill them with less, though.

Smothered Filet Mignon

My husband loved this recipe as written. I preferred it without the toppings (onions and cheese) in the end... It was easy enough for me to just scrape them off and enjoy the flavor of the marinated steak. We will definitely be making this again.

This was really good! My husband preferred to use a new bottle of BBQ sauce to baste, instead of basting with the sauce in the pot since it was so thin... but other than that we followed the recipe. It's a keeper!

I used butterscotch pudding and white chocolate chips - and the result was really good! They were actually better on the second day. These will definitely be made again in our house - and we will continue to experiment with flavors. Great recipe!
