Overnight Blueberry French Toast

This was a hit at our prayer breakfast this Sunday. I only made a few changes. I divided into 2 containers so it would serve more and substituted blue berry syrup for the maple syrup. Will be serving again and had many requests for the recipe. Thanks for sharing!

Candy Cane Fudge

I substituted white almond bark for the vanilla chips since that is what I had on hand. I used candy canes that I bought on sale after Christmas and chopped them in my food chopper until 1/2 were like powder and the other half were small chips before adding to the mixture. It was a big hit with everyone.

Ultimate Breakfast Casserole

This was an awesome recipe, I made a few modifications, 6 eggs, added a combination of steak, bacon & ham to equal 2 cups and used pizza blend cheese and additional cheese on top after I took it out of the oven.

Microwave Pralines

This is the recipe that my Paw Paw has used for years and he is from the New Orleans area. They are requested in mass orders during the holidays. A few key things to remember: High humidity will delay the sitting process, placing the wax paper on kitchen towels may help. Be sure that the cream (half & half) is very fresh and cold and to seal them in AIR TIGHT containers as soon as they cool to prolong shelf life. If they start to crystalize later, place them in a food processor/chopper to chop up and add to homemade vanilla ice cream or top off your favorite ice cream or desserts with it.

Cheese and Sausage Stuffed Zucchini

The family loved it! I used canned, diced italian tomatoes since I had them on hand, I used 1/2 the sausage and add 1/2 cup of bacon bits for variety. Will be cooking again. Thanks for sharing.

Scrambled Egg Muffins

This is a great recipe for meal planning. However, I only cook them until they are no longer runny. Then I allow them to cool before I place them in labeled freezer bags. As they cool, they will thicken up. By doing this, they are not rubbery when they are taken out of the freezer and reheated.

Simple Ranchy Breaded Fish Fillets

With the exception of modifying the spices to suit our taste, this coating is one that I have been using for years to coat chicken with prior to cooking in a covered dish in the microwave. It makes any meat coated in it super moist. I had used it on fish before but we loved it. A great way to cut back on the fried foods and bake instead. Thanks for the recipe.

Scalloped Oysters I

This is a hit at our house. I used 1 cup of home-made italian bread crumbs on the coarse side and used 2 cans of oysters since I had them on hand already. My husband ate so much of this that I was scared he was going to get sick. He wants me to serve it for Thanksgiving this year too. Thanks for sharing.

Banana Split Cake II

This recipe was a hit by all. I did jazz it up a bit since it is called a banana split cake...had to add 1/2 can of cherries on top of the pineapple and chocolate syrup all over the bananas before adding the whipped topping. I substituted chopped pecans for the walnuts. I used more cherries than listed and cut the cherries in half and placed them over the top of the topping so that you got a cherry in every bite. Yummy for your tummy....cool and fun to eat too.

Sugar-Free Bread Pudding with Whiskey Sauce

I took the advice of others and doctoredd it up a bit. I reduced the raisins to 1/4 cup, added 3 peeled,pitted and chopped plums. I mashed one ripe banana and added it. I doubled the vanilla and added 1 tsp of cinnamon. For the glaze, I replace the whiskey with lemon juice instead. The cooking time was increased an additional 20 minutes to reach the desired firmness. It was a hit with the family and we didn't have any leftovers either.
