Alison's Gluten-Free Bread

Reviewed: May 4, 2011
This has been the closest match to "real" gluten bread yet! I double the brown rice flour and leave out the white rice flour, but otherwise, find this to be an excellent gluten free recipe.

Makeover Morning Glory Muffins

Reviewed: Dec. 27, 2010
These are absolutely fabulous! To make them slightly more healthy, I did replace the white sugar with honey and since I did not have applesauce on hand, I used one and a half mashed bananas. These were SOOOO moist and yet light and spongy. Perfect texture! Thank you!

Santa Fe Rice Salad

Reviewed: Mar. 23, 2010
WOW!!!! Superb with the following changes: 1. Dried black beans soaked overnight and cooked the next day in water with chicken base (or bullion), beef base, garlic powder, onion powder, garlic salt, cumin, greek seasoning and chili powder. 2. Brown rice baked in water with chicken base, beef base, onion powder, garlic powder and olive oil. 3. Add to salad: corn, cilantro, green pepper 4. Dressing: olive oil, red wine vinegar, sugar, cumin, greek seasoning and NO SALT. Now its wonderfully delicious!!!

Cocktail Meatballs

Reviewed: Mar. 23, 2010
I have tried this recipe twice and although it is very easy and seems to be a good base recipe, I think some extras are needed to make this a 5 star recipe. Both times I made the meatballs, they were very bland and tasteless. Extra garlic salt, onion powder, and/or a mexican/smokey-type seasoning would add the necessary taste. The sauce was better and may benefit from the addition of some liquid smoke. Overall, this is a keeper recipe, but needs additions to make is perfect.

Lemony Quinoa

Reviewed: Mar. 23, 2010
This may be an excellent recipe with a few more additions since the flavor is all lemon rather than a nicely combined flavor. It is, however, a very healthy addition to any meal and I would recommend anyone try this as a base recipe and be creative with extras.

Sweet 'n' Hot Glazed Salmon

Reviewed: Mar. 23, 2010
I have tried multiple salmon recipes and this is my favorite for a sweeter salmon recipe. Apricot nectar is hard to find, but apricot preserves works just as well. I did not have dried apricots on hand and though I think the chunks would have added appeal, the flavor was not compromised without them.

Italian Sausage Soup

Reviewed: Mar. 23, 2010
This soup will win you multiple compliments from your guests! It has a tendency to be salty so do be careful in this realm. I would like to see more vegis in a soup for myself, but if served with salad, this certainly is a delicious soup.

Grilled Mediterranean Vegetable Sandwich

A little messy, but a tasty and healthy sandwich! The garlic mayo is the highlight of this recipe and multiple types of vegis could be substituted.

Mock Tuna Salad

Reviewed: Mar. 23, 2010
Wonderfully delicious and healthy! I did not expect a true tuna taste, but was surprised by the similarity (most likely from the relish). Tasty additions include garlic, white onion and green pepper.

White Chocolate Raspberry Cheesecake

Reviewed: Mar. 23, 2010
Absolutely delicious and perfectly smooth!!! I wasn't sure how the raspberry seeds would strain, but the syrup turned out beautifully! The only change I made was that I used crushed chocolate chip cookies for the crust since I couldn't find chocolate cookies.

Savory Garlic Marinated Steaks

Reviewed: Jun. 21, 2009
WOW!!! Absolutely wonderful! I only marinated the steaks for 6 hours and if they tasted this good, I cannot imagine how much better they would be if marinated for longer. I used round steak and it was the best I have ever tried.... better than any restaurant steaks!

California Grilled Veggie Sandwich

Reviewed: Jun. 21, 2009
I absolutely love these sandwiches for lunch! I usually add a slice of cheese on top simply to hold the vegi's together. The feta cheese really adds to the flavor and therefore cannot be left out.

Peanut Butter Chip Chocolate Cookies

Reviewed: Jun. 21, 2009
Excellent cookie and far from the traditional. In order to ensure the cookie was chewy and not crunchy, I replaced half of the white sugar with brown sugar.

Creamy Carrot Soup

Reviewed: Feb. 5, 2009
Excellent carrot soup recipe! I didn't have potatoes and therefore left them out, adding more carrots instead. I only added enough broth to cover the carrots and once softened, blended the whole thing. I substituted half and half for cream. I will make this again, but play around with the spice amounts.
