Choc-Oat-PB Bars

I used natural peanut butter, 1/2 cup less sugar than called for, added 2 tbsps extra cocoa, and substituted quinoa flakes for the oats. The results set up great, and were enjoyed by all. Next time I will use less butter, because the bars, came out a tad on the greasy side. No bake in bar form is definitely the way to go.

Cornucopia Chili

I was looking for a good chili to experiment with TVP for the first time. The chili turned out great. Halved the recipe to 8 servings. We used 2/3 of the recommended amount of TVP and it was plenty thick. MSG is quite common in TVP, so make sure you choose a brand that does not have MSG! Instead, add some extra salt and hotsauce, and a good couple tbsps of barbecue sauce to the chili. It makes things super tasty and free of questionable chemicals! Thanks!

Amazing Whole Wheat Pizza Crust

This crust was nice and more wholesome than the usual whitecrust we make. We substituted the salt for 1/2 tsp garlic salt mixed with 1/2 tsp salt. Also we added about a tsp each of basil and oregano to the warm water mixture before adding flour. We used about 1/3 of the dough to make garlic knots (which were BETTER than the pizza) and the rest for a large thick crust pizza. For the garlic knots, we drizzled them with olive oil mixed with garlic salt and oregano and parseley, baked at 425 for 8-10 minutes on olive oil greased baking sheet, and sprinkled with grated parmesan when hot out of the oven. Dip with marinara, they were delicious!

Corn Dog Muffins

This was a hit at a barbecue. I found bluecorn jalapeno cornbread mix at Trader Joe's, and I used vegetarian hotdogs (Morningstar makes a great one) cut in thirds. Everyone loved them, thanks for the great idea.

Spanakopita II

This may be the tastiest spanikopita I've ever had. The mixture was a little wet for using just one phyllo sheet per triangle. Next time I might use 2 sheets per triangle. The only modifications: I added 2 minced cloves of garlic to the mix, and 2 tbsp of chopped basil alongside with the dill. Simply amazing.

No-Bake Peanut Butter Cookies III

i made a 2/3 recipe since i only had one stick of butter on hand. reduced the sugar because i feared it would be too sweet, and still was too sweet for me. the smell was great, but the mixture was a little runny -- might be because i used regular (not-quick) oats? But the cookies finally set over-night. taste good but too still too sweet, and i think i prefer chocolate with my peanut better.

Tofu Parmigiana

Tasted fine, this was a simple parmigiana recipe, I don't think tofu works as well as eggplant, though. I think I prefer my tofu most in Asian dishes.

Avgolemono

this was a great soup! easy, simple and a great way to use fresh lemons. Though my boyfriend and I have never had this soup before, we loved every bit! I didn't have orzo on hand so i broke up spaghetti as small as I could and we made it vegetarian by using vegetable broth instead of chicken stock. Would definitely make again.

I halved the sugar and made this on a pizza stone at 400, as recommended previously here. My boyfriend loved the naan, everyone was happy with the results. Will definitely make again.

Paneer

This was my first time making cheese, and it was a very exciting process. The taste was good, but it was a little crumbly and difficult to cut neatly. Halved the recipe, used whole milk and the results could easily serve 6. The recipe was good, except I think I prefer the tofu-like cheese in restaurants better because they probably are easier to cut and work with.

Indian Matar Paneer (Cottage Cheese and Peas)

I used another paneer recipe, but used this curry recipe. While the flavor of the curry was good, the consistency of the curry was off. It turned out like seasoned mixed vegetables, instead of a saucy stewy curry. Will probably be looking for other curry recipes or try to improve upon this one.

Bow Tie Medley

delicious! Colorful and healthy, just used spices to taste. I didn't have squash or zucchini, but upped the onion (used white), added Quorn chicken bits, and also added shredded mozzarella at the end. it turned out nicely and my boyfriend loved it.
