So fake, I don't know if this is Cuban or Brazilian, but definitely not Mexican with all those peppers and olives....maybe Texmex.

Black Beans with Pico de Gallo

Nice bowl of soup or a meal in a bowl! I usually bake the beans my self in a pressure cooker. Also, I add soft white cheese (queso fresco). The bacon fat is KEY to get rid of the 'canned' flavor and hit into the mexican authenticity!

Habanero Salsa

I used only fresh ingredients. I used 2-3 big tomatoes, 4 thai or 5 serrano fresh peppers instead of the can of green peppers, and did not use sugar. If I need a sweet salsa I would substitute sugar for half a pureed mango.

Chocolate Pudding Fudge Cake

Very delicious! I couldn't find devils cake food mix in the Netherlands so I used a regular kinda chocolate pound-cake mix. I added vanilla and instead of water I added a mix of port and raspberry preserves. I also had to break a cocoa bar into pieces because of a lack of chips. It turnout Mmmm, although I keep thinking it would be better to have used devils food cake mix. I'd do it again soon!

Authentic Enchiladas Verdes

Good authentic recipe, the only thing I change because of family tradition is boiling the tomatillos and peppers before mixing them in the blender, You can puree them raw and then boil the mixture and season with some salt.

Eric's Best New York Style Cheesecake

This cake was Mmmm yummy, silky but consistent enough to feel as a substantial dessert. It was easy to make. Instead of amaretto I used vanilla.
