Modenese Pork Chops

Oh my gosh, these were SO delicious!! I ended up covering them at 19 minutes, turning the heat off and letting sit until we were ready - about 5 more minutes. My picky kids weren't as thrilled, but the Mr. and I were absolutely smitten with these chops. Will be adding these to our regular menu.

Easiest Pot Roast Ever

This was very easy, and was exactly what I was looking for... I over cooked mine so it was a little dry and put too much beef bullion in so it was a bit salty, but if I wasn't contending with that it would definitely be 4 stars! Adding to my recipe box now...

Artichoke Chicken

I am going to be one of "those" people that pretty much changed the whole recipe and then rates it... but it was delicious! We had about a cup of alfredo sauce left over from another dish earlier in the week so rather than the parm. and mayo we used that, added a bit of garlic powder and the artichoke hearts... DELICIOUS!!! Even our picky son liked the chicken (with the artichokes removed.) Wonderful recipe, so easy, and totally delicious!

Baked Pesto Chicken

Delicious dinner! We didn't have mozz cheese so substituted feta and goat cheese - yum! Very simple and quick. Will be keeping this recipe close by when a quick meal is needed.

Pollo Fajitas

This was an EXCELLENT recipe! We've never ventured into fajitas before and this was a wonderful introduction. Incredibly easy to make, great flavor and it made just enough for our family of four. We left out the hot pepper sauce and halved the chili powder (because our oldest and I have very sensitive palates) but I imagine that for those who like it hot it would be really easy to modify to your tastes. We highly recommend this recipe for everyone who needs a quick dinner. Thank you!

Insalata Caprese II

my husband made this as an appetizer for dinner tonight and what a delicious surprise! I absolutely loved it. I think that marinading the cheese a bit or dressing with some balsamic vinaigrette would really enhance the flavor and make it taste just like it does in Italy. Thank you for the wonderful recipe!

Best Broccoli Cheddar Soup

We all really enjoyed this - our picky 8 year old included. My husband made this for us and as per the recommendation of the author used the potato soup mix rather than the cauliflower soup mix. This will definitely be added to our "quick dinner" menu!

Best Lemonade Ever

We followed another reviewer's advice and only put in 1-1/4 C of sugar and this was so delicious. Am waiting for our strawberries to ripen some more to make strawberry lemonade... YUM!

Baked Halibut Steaks

I feel the need to start this with "I don't EVER eat fish" but this was very good! I felt that the fish steak itself could use more flavor and so the next time I think we'll try a complimentary marinade of some sort, and I don't know if my husband put enough feta on, but all in all this was a wonderful dinner.

Streusel Topped Blueberry Muffins

these were a wonderful treat this morning for breakfast! We all enjoyed them very much and I'm not usually one for the giant blueberries in my food... my streusel didn't turn out as crumbly as it was supposed to and the batter made a lot more than 12 muffins, but perhaps I over did it on something or as I mentioned the giant blueberries may have taken up more room than expected. Whatever the case these were delicious and I recommend whipping up a batch for your own breakfast treat.

Fluffy Pancakes

These were really delicious and made a fab breakfast. We made a batch as listed and were really good, but had to make a second and used the following: half & half instead of milk (because another "project" I was working on didn't come to fruition and it would have gone to waste...), vanilla bean paste (which is a wonderful product!!!), and a little extra sugar - because it's yummy. Oh, we also pureed some strawberries and added a couple of tablespoons to the last couple of pancakes we made and it was a fun addition. Great recipe and so much room to play around! Thanks Kris!

Scarlett's Chicken Cacciatore

WOW! This was a wonderful dish! My husband said that he's had cacciatore before in restaurants and homemade, but it's never been something that he specifically looks for on a menu, but this recipe completely changed his view of the meal. If we could give it 10 stars we would, it's delicious!! Used left-over sauteed onions and chicken thigh meat, but other than that everything was just as printed and it was scrumptious! Thank you Scarlett!

Baked Spaghetti

This was delicious and easy! I think next time we make it we may add some other herbs: basil, garlic, and other yummy things, but even without it I loved it. Pretty simple to make and I'm about to go back for thirds! YUM!!!

Chicken Cordon Bleu II

Delicious!! Even though I over-cooked my chicken the flavor was wonderful! I used our stick blender to mix up the whipping cream and cornstarch (and actually over did that too - I wasn't really paying attention) and I think that made the sauce thicken up very easily. Great recipe, I think we decided that we'd double the ham and cheese the next time, but we had very thinly sliced deli meat/cheese. Thank you for a wonderful dinner!

Big Soft Ginger Cookies

I love these! I whipped them up in no time and just happened to have everything I needed. I ran out of AP flour so more than a cup and a half of the flour is wheat flour, but seeing as I haven't made them the "real" way I don't know what difference it made. Delicious! (Even my husband likes them and he's not a huge fan of the Ginger Cookie.) Cheers!

Spanish Rice II

This was very easy to make and was a huge hit. Made it with Angela's Awesome Enchiladas and it all went together perfectly. (Too spicy for me, but I am a very bland kinda gal!)
