Caramel Pretzel Nut Popcorn

This is an awesome recipe! I reduced the size down to 4 servings since I had only 1 cup of chopped pretzels. I didn't account for the small amount of caramel, so I burned my first batch of caramel. The second time I only boiled the sugar mixture until golden brown and proceeded with the rest of the recipe. I would also recommend using dry roasted peanuts. I grabbed cocktail peanuts because it was what I had available and they won't stick to the caramel. Despite this, I am going to have a hard time saving this popcorn for the kids!

Slow Cooker Vegetarian Minestrone

This was an amazing vegetarian minestrone! I made a few substitutions (added a can of garbanzo beans, omitted the green beans, zucchini and spinach, added asparagus). The seasonings were just right, the flavor was amazing and my husband requested his serving without pasta and he ate two bowls! I think I will hang onto this recipe as a great base for making soups in the future.

Absolutely Excellent Oatmeal Cookies

This recipe did not work well as cookies. The first sheet of cookies ran into each other in the oven. After that mistake, I turned the rest of the batter into cookie bars. They're still too moist and gooey, but with some imagination, they still make a tasty after-school treat.

Pineapple and Banana Smoothie

Great recipe! I love to "ad lib" with recipes, so I added a splash of vanilla, half of a peeled and cored apple, skim milk, and some flax seed. It's an easy recipe to tweak to your taste.

Mary Wynne's Crabapple Jelly

My kids love this, mainly because they enjoy picking the crabapples. The last time I made crabapple jelly I had to add some pectin, so when you're making this, better have some on hand in case you need it. Also, preparing the apples is very time-consuming. Next time I think I'll coarsely chop the apples in a food processor.

Roasted Asparagus and Mushrooms

This is now my favorite way to prepare asparagus. I whipped this up very easily and I'm so glad I came across this recipe. I didn't have fresh rosemary, so I tried what I had, dried ground rosemary, and it still was very good. I think I used more like 2 tablespoons of olive oil, too.

Aussie Chicken

Excellent recipe! I made it to impress my mother in law, and she was impressed. I really wanted to see if it was similar to the Aussie Chicken served at a national Australian restaurant chain, and if I would have closed my eyes, I think I could imagine eating this in their restaurant.

Crustless Spinach Quiche

This is such an easy recipe. It seems that every time I bring this to potluck, the crustless quiche is gone before the regular quiches. I substituted mozzarella for the Muenster cheese and it turned out just fine. There's more cheese than egg, though, but it holds up great!

Banana Anna

I doubled this recipe as I had two bananas that were ripe and ready for this recipe. I left out the nutmeg and added one cup of crushed ice (for the doubled recipe) and it was a hit! I will be making this one again. Super easy!

Brunch Strata

I have made this recipe twice now and it never disappoints. It makes a lot of food, so I freeze it in 8 X 8 portions. I bring it out of the freezer when I need it and wow everyone's taste buds! Last time I made it I replaced the zucchini with blanched kale and the ham with turkey bacon. I think the options are endless! Have fun with this recipe and enjoy!

Hearty Harvest and Ham Stew

Very flavorful. The ham, cabbage and caraway reminded me of a corned beef flavor. My husband admitted it wasn't appealing to look at. Maybe it would be more appealing if the cabbage and onions were chopped into larger pieces.

Playgroup Granola Bars

Love it! I added 1/2 cup flax instead of wheat germ and it's good this way, too. I used mini chocolate chips instead of raisins and the kids just gobbled them up while they were still warm. My husband had one later and immediately asked, "Honey?" I said, "Yes, quite a bit." I may try to take the honey down in it. This is definitely a keeper of a recipe which I'll enjoy making different versions in the future.

Black-Eyed Pea Dip

Help! I've made this awesome recipe and I can't stop eating it! I couldn't find canned black eyed peas so I used my favorite - black beans - and it is probably just as tasty. I've gotta go now, I need to make more of this tasty recipe!

Sausage, Kale, and White Bean Soup

Yummy! This may be the best way I have ever prepared kale. I used one 15 oz. can of navy beans and the liquid instead of the dry beans and it turned out just fine. I had a little difficulty slicing raw sausage, but I don't care - it tastes awesome!

Simple Swiss Chard

This recipe was really good! The only substitution I used was roasted garlic instead of fresh. I was expecting the vinegar to be overpowering, but all the flavors complimented each other. I also sprinkled it with shredded parmesan cheese as a finishing touch. I will make this again if Swiss Chard ends up in my basket again.

Minute® Rice Lasagna

I found a favorite, tasty and easy recipe! I had leftover rice in the fridge to use (not instant) and it worked great, too. I was worried that the recipe might lack in flavor, so I substituted one large clove crushed garlic and added 1/3 cup chopped onion, and it definitely did not lack in flavor. I also used the sour cream substitution of the cottage cheese, and that worked well for me, too. Great idea for making an easy lasagna!

Pumpkin Rice Pudding

I used 3 1/2 cups of milk like others had suggested, and the pudding turned out really dry. I'm not sure if the extra 1/2 cup of milk would have made it more "custardy". Maybe the three cups of rice was too much? I'm not sure what to do with this recipe to make it better.

High Altitude Deep Dish Brownies

I made this recipe at 5000', it turned out great! The time was right on. The nuts and chips are an added touch, making the brownies even tastier. I will be making these again.

Chocolate Banana Bread Pudding

I made my first batch with the sliced bananas, and my husband wasn't too crazy about the cooked sliced bananas. The second batch I pureed the bananas in the milk and eggs, and he liked it much more. So, I recommend that if you don't like the bananas baked, puree the bananas before you add the milk and eggs. I love the flavor of bananas and chocolate, so this will be one of my favorite recipes. What an awesome recipe!
