I LOVE this recipe. This is the greatest thing since "sliced bread". I always modify it slightly and it always turns out great, so don't be afraid to change this recipe. I usually roast a chicken the day before and whatever is left over I will chop and put in half this recipe. Make sure that your layer of chips is not too dense, you want the chips to be slightly soggy, like a noodle. I didn't have tomatoes with green chiles, so I used half a can of stewed tomatoes and half a 4 oz. can of green chiles, worked just as well! Since I halved the recipe, I just used one can of cream of mushroom soup. I also added a handful of frozen corn in with the soup mixture for more veggies. Half of this recipe will still feed 2 adults, 2 very young children two meals. I will serve cornbread with this meal, and I put the rest of the green chiles, as well as some corn and cheese in the cornbread for a tasty side to this dish. Love it, love it! If you like Tex-Mex food, then you really should try this dish.
