Sue's Hot Fudge Sauce

This was easy and made a LOT of sauce -- I made it for a large party (20+) and still had a lot left over. The reason for my "average" rating is that I didn't find the sauce to have a lot of depth -- I prefer a deep, dark chocolate flavor and felt this one was more sweet. I had added additional cocoa and some chocolate chips to try to add some depth, but think it could use some dark chocolate or coffee to make the flavor more complex. Good basic recipe, just not the total indulgence I'm looking for in hot fudge.

Eggplant Croquettes

Very mixed review on this: My kids and husband (none of whom like eggplant) ate these without complaint. The fact they resemble burgers in appearance and have little eggplant flavor helped a lot. I did not like them though -- I found them really bland, too soft, heavy on the flavor of breadcrumbs and without enough eggplant flavor. This is a recipe better for those who don't like eggplant than for those who do - I won't make again.

Millet Muffins

This recipe is a keeper. We cut the oil in half and added 1/4 of applesauce and found the batter was fine for 12 muffins and was moist. The taste was like sweet wheat bread, with the benefit of a little crunchiness from the millet. The kids gobbled them up with dinner, but they'd be equally good for a snack or breakfast with a little jam. Thanks for this great recipe!

Whole Wheat Banana Nut Bread

I've made many different banana breads, but I think this is really the best tasting and the only one I've added to my recipe box. It's very tender and light (not dense) and the honey creates a buttery undertone. I did add some extra banana to use up what I had on hand and didn't have a full 1/2 cup of honey (subbed in a small amount of brown sugar). Still --wow!

Cabbage Patch Stew

I thought this was a great idea to use cabbage so that it wouldn't be as noticed by the kids. Came out very much like a chili with cabbage in it, but my chili kid ate it up. Overall, I found the flavors to be a little bland. I would definitely make this again, but would add some chili powder and more cumin next time.

Cocoa Banana Bars

Yum! The banana and the butter really stand out -- and the chocolate just makes it perfect. I did some minor changes: used 1/2 cp of wheat graham flour in lieu of all white and used 2/3 of brown sugar instead of the cup of all-white. Following another reviewer, I put the banana batter in the pan first, then mixed in the cocoa and added 1/4 cp of mini chips. I plan on wrapping the squares and freezing them to add to the kids lunchboxes (If we don't eat it all first!)
