Fluffy Pancakes

followed recipe exactly. Husband made a comment that these were the best pancakes I ever made. Easy, simple recipe with ingredients that I always have on hand. Thanks for the recipe.

Chicken Mole with Four Chiles

My husband and father in law love chicken mole, so of course I logged onto allrecipes to find me a recipe. This was very very good! A couple of things to note 1) I cooked the chicken in a dutch oven (filled with water) and used the broth from the chicken to thin the mole paste while blending. 2) I added 1/2 tsp of cloves and 1/2 tsp cinnamon to the onions and garlic. I mixed the mole sauce and the chicken together at the end, and simmered for 20 minutes. My sauce came out really thick---just how my family likes it----but the pieces of chicken didn't hold together well. Next time I will remove the chicken from the dutch oven after it is cooked, set aside, and cook the mole sauce in the remaining broth. Will probably serve by pouring the sauce over the piece of chicken. Will definitely cook again, and probably play with the spices a little more, maybe add more toasted cloves. Thanks for a great recipe!

Spicy Vegan Potato Curry

easy recipe, loved it. I used 1 tsp of cayenne pepper and it was still pretty spicy, so consider adjusting to your preference. I served with brown rice. Thanks for a great recipe, definitely a keeper.

Chuck's Favorite Mac and Cheese

Made this recipe for Thanksgiving this year, it was a hit! Had to make extra for leftovers for home. At the suggestion of others who rated, I increased the amount of cheddar cheese, added a little milk, and also cream cheese. Thanks for the awesome recipe.

Mocha Ice Cream

this recipe was great. Only thing I would do differently is add more coffee. I even used splenda in place of the sugar. I also added marshmallows and chocolate chips. Thank you for a great recipe!

Blueberry Sauce

Great recipe. I used blackberries, because that is what I had on hand. Also substituted splenda for the white sugar. I used fresh squeezed orange juice, and my recommendation is that if you do, stick with the original amount. I took the advice of others and decreased the amount to 1/2 cup of OJ, but ended up adding the other 1/2 at the end. At first the mixture seemed to thick, but this is remedied by adding a little more water for desired consistency (also helped that I added the fresh squeezed oj). I love the almond extract, gives an additional dimension.

Raspberry Ice Cream

very creamy ice cream. I used strawberries instead of raspberries, (processed in food processor) and used splenda instead of sugar. My family loved it, but it was a little too rich for my taste.

Candied Sweet Potatoes

Great recipe. Made it this past Christmas and it was a hit with the ham. I used yams instead of sweet potato and cut the butter and sugar to 1 cup. I might decrease the amount more next time. Will keep the sam amount of marshmallows, though!

Fudge

Easy, fast, and was a hit for the holidays. With one batch, I added 1 cup mini marshmallows at the very end (and tried not to mix too much to prevent them from melting), and topped with 1/4 cup mini marshmallows. In another batch, I added 1/2 cup peanut butter chips and 1/2 cup marshmallows. This is a great basic recipe to add various other goodies. I love how easy and fast it was to make. My whole family loved it!

Pear Bread II

This was a good recipe to help me get started with my own version. I took other people's advice and substitute applesauce for the oil; used 1/2 c brown sugar in place of 1/2 cup of sugar (I actually used 1 1/2 c of splenda instead of sugar). I also used 1c whole wheat flour in place of 1c all purpose flour and threw in a tsp of flaxseed. Also used 1 tsp of almond extract because I didn't have any vanilla and I didn't use any nutmeg as I didn't have any on hand. Turned out great, and healthy, too! I will try using bananas and other fruits in place of the pears with this recipe from now on.

Seaweed (Nori) Soup

I make this soup with the same type of ingredients but in different quantity. I usually sweat some yellow onion and garlic prior to adding and browning ground beef. Then I add finely chopped celery instead of water chestnuts. You may also substitute mushrooms. I also use one cube of buillon for every cup of water used, so in this recipe, use 8 cubes. I use vegetable instead of chicken. In the end, to give the soup a little more consistency, I add a bundle of clear bean thread noodles at the end (after they have been soaked in water). I also put three eggs instead of two and add one more sheet of seaweed and top it off with some cilantro.

Gourmet Mushroom Risotto

yummy! I used a combination of this recipe and another one from an italian cookbook. I used vegetable stock instead of chicken , threw in some frozen peas prior to adding the veg. stock and added a roasted bell pepper at the end with the mushrooms.

Easy Sugar Cookies

I love this recipe. It's really easy to make. I made 2 different batches--one with the butter that the recipe called for and the other with margarine and noticed that the cookie dough that I made with butter seemed a lot more dry and crumbly than the margarine made dough. Perhaps this is what other reviewers experienced? I noticed that the margarine batch was a lot more soft than the butter batch. This recipe is also very good even if you substitute the sugar with splenda. This recipe really is "easy"!

Di's Delicious Deluxe Deviled Eggs

I made these eggs for as an appetizer for an Easter party for my family . They all liked the texture that the onion and celery brought to the eggs. From reading the reviews, I decided to add dijon mustard because I tend to like that pungent acrid taste that mustard brings to deviled eggs. Some may think that it interferes with the hot sauce, although my family loved the eggs and I would definitely make them again.
