Tomato Gorgonzola Soup
I've only made one other recipe, so I suppose saying this is 'the best' may not carry a lot of merit, but this would easily be a soup you would find in a nice restaurant. I didn't have cream so I used straight milk and since I didn't have tomato juice, was making it out of tomato paste (3/4 c paste + 1 cup water to make tomato sauce, then equal parts sauce/water to make juice) so I added in an extra teaspoon or two of paste as a thickener. It was excellent. I pureed the whole thing and my kids, husband and myself dipped grilled cheese sandwiches into it. Definitely something I'm going to make again and again.

Authentic Thai Coconut Soup
I do not think this is any exaggeration to say that this is the best soup I have ever tasted. Based on other reviews, I used ginger in place of the galangal. The lemongrass and lime leaves are essential. I also used one can of regular and one can of lite coconut milk, and used red curry paste in place of the curry powder. The flavor in this soup is incredible. Thank you so much for sharing.

Spinach Tomato Tortellini
Mild but good flavors. I used 10 oz of frozen chopped spinach and added about 1/4 cup of water to it and the tomatoes initially because it seemed a little dry. Baked fresh bread to wipe up what remaining sauce there was. Delicious and easy. Definitely going to make this again.
