Roasted Pork Loin

Reviewed: May 9, 2012
OMG. This was sooooo good! The only change I made was to drizzle just a little olive oil on top instead of the whole 1/4 cup. I didn't have much juice from my 3 lb roast so I did not baste it. Cooked it with a meat therm until 165 and it was very juicy. I have already called 3 people and told them to make this.

Marinated Chicken Breasts

Reviewed: May 8, 2012
Sooooooo good. I used double the amount of horseradish since my whole family loves the zest it gives cooked meats. I only marinated the chicken 2 hours and it was very flavorful. Also, left over chicken made for an excellent chicken salad sandwich!

Mexican Rice II

Reviewed: May 8, 2012
Thank goodness someone finally saved me from boxed Mexican rice. This was delicious and easy to make. The only change I made was to add fresh garlic. I will be serving this with all my Mexican food from now on!

Pretty good. Used bacon instead of bacon bits. Did not hold up well overnight.

Buffalo Chicken Dipping Balls

Reviewed: Mar. 7, 2012
These were a little salty for most of us but they were so good we ate them anyway. Found out the buffalo sauce and the ranch mix (I used Hidden Valley Buttermilk Ranch) contained tons of sodium so I think I will decrease one of them...probably the Ranch Mix. I used Panko bread crumbs as the balls would be traveling and I wanted them to stay crispy. I also used cream cheese as others suggested but I feel this was a waste of time and money. Can't wait to make these again with the changes.

Pumpkin French Toast Bake

Part french toast, part bread pudding! Guests raved over this breakfast. I like it but i think I will use french bread next time as that is simply my preference. Can't wait to make it again.

Slow Cooker London Broil

Really tasty and easy recipe. Mine came out a little dry so next time I will cook it for a shorter period of time. Did NOT smell good at all while cooking but the taste made up do that. The gravy was a little thin for my taste so I thickened it while finishing up the mashed potatoes. Even my personal food critic (my husband) said he would enjoy having it again.

Buffalo Chicken Dip

Doubled the recipe. Made this for a small gathering, leftovers were taken to another and those leftovers were taken to yet another event. Everyone raved about it. Used neufchâtel and I could not tell a difference. Don't think the cheddar cheese was necessary though. Delicious!

Chicken Paprikash

I did something wrong and the sauce began to separate but not even that could ruin this dinner. Boiled the dumplings in chicken broth. Made them a little too big so I will change that next time. Both kids loved it also

Microwave Popcorn

Reviewed: Sep. 9, 2011
What I like about this recipe is the possibilities are endless! I use 1/3 cup of kernels and that is the perfect amount for a single serving for our family. Just a spritz with popcorn spray and some seasoning and we are good to go. My son likes it with cinnamon and sugar and my daughter likes it with jalapeño salt.

Totally Tangy Baked French Fries

Reviewed: Jun. 28, 2011
I can't believe how wonderful these fries were! Omitted the crushed red pepper because I have little ones and used Dijan as that was all that I had. Tasted the sauce prior to tossing potatoes and I was horrified as it tasted like salty vinegar but after they came out of the oven I fell in love with these potatoes

Jimmbo's Garlic Knots

Reviewed: May 23, 2011
The whole family loves these. The only tip I have is not to use garlic from a jar! Someone had left some at our house and I used it in order to save time. It ruined the knots. I had to convince the whole family to try them again. Now we eat them frequently.

Uglies

Tasted just like what mom used to make when I was little (we called them Bar-B-Cups). I think that next time I will make them more grown up by substituting chopped brisket for the ground beef, Monterrey or jalapeno jack for the cheddar and add chopped green onions. Yummy

Mountain Apple Cobbler

So delicious! I also tried with peaches (don't use soft ones) and it was just as good! They don't hold up so well in the syrup after a day in the fridge so I remove them from the syrup and just spoon it after reheating.

Really good. Had some issues with the dough but in the end it wasn't a problem. Followed directions to a T but next time will omit the pickles, mayo and ketchup and add other ingredients my family enjoys more. Can't wait to make them again.

Restaurant-Quality Baked Potato Soup

Reviewed: Feb. 2, 2011
*New Review* The problem last time was the type of potato flakes I used. After making again I have changed the review to 4 stars. Still a little salty for me but very tasty. *Old Review* Way too salty and tasted like bacon (before I even added the real bacon). I used "loaded" potato flakes which might have caused this. I would like to try this again with plain flakes as the texture and thickness was exactly what I was looking for.

Paprika Pork Chops

Reviewed: Feb. 2, 2011
I was skeptical when I read this recipe. In the end it was very tasty. I eyed the spices for the pork chop (I might have used a little more salt) then followed the rest of the recipe. Even my 4 and 6 year olds ate it.
