Fluffy Pancakes

My hub and I powered down a whole batch of these today. We added a little fresh vanilla bean which made them irresistible. From skillet to mouth, no need for plates with these gems. I don't think I will ever be able to suffer through store pancake mix ever again. Long live pancakes!

Sunday Brunch Casserole

such a versatile recipe! this is my goto for house guests so I can enjoy them and not being shackled to the kitchen. I switch it up a lot and use what I have on hand depending on the eater's tastes. Little kids love this - as long as you don't use the hottest sausage ever! hahaha oddly, the leftovers are great. sliced, heated and placed on toast. delish!

Spinach-Cheese Swirls

this is a very flexible recipe. Be sure to really squeeze the water out of the spinach. Season it well with salt and pepper too. I used fresh garlic, fresh parm, and white cheddar for these delish morsels! I had best results refrigerating the swirls before baking.

SC Frogmore Stew

Using good ol' southern shrimp, sausage, corn... (asian shrimp varieties don't compare in flavor). Ice cold beer and fresh southern table wine (iced tea) are a perfect match. Doesn't hurt to start with boiled peanuts! This is flexible country cookin' that's best eaten outside but if the skeeters are out in force, inside works just fine!

Spinach Stuffing Balls

I recommend baking one ball to taste it before rolling the whole batch. You can adjust the flavor accordingly. I made these a day ahead and froze them. Perfect cocktail app!

Individual Beef Wellingtons

I created a crazy fun appetizer for a cocktail party. Aafter browning the tenderloin, I chopped it into small cubes. After testing a few rounds, I found it really important to make it easy to eat as a finger food. Make ahead of time and freeze. Big hit!

Eric's Best New York Style Cheesecake

I put a few dashes of cognac and rum in this just to dress it up a bit for a very adult beverage drinking crowd. Served raspberries dowsed in Cointreau on the side and it was fantastic. Happy partygoers!

Salmon Puffs

I omitted the cheese - didn't want any special trips to the store. These are delish. I put lemon zest, S&P on the fish that I cubed and dried very well. Be sure to refrigerate the dough parcels for about 15 minutes before baking. Serve with a dill sauce, creme fraiche or alone...they are wonderful and simple.

Smoked Turkey

Very tasty bird! So glad men love smoking food. Jacques started about 4am and kept watch for about 10 hours. (including time to get the smoker up and ready for the bird). Very moist and worth Jacques' effort!

Sweet & Sour Brussels Sprouts

If you don't care for brussels sprouts then take a pass on this. If you happen to really enjoy them then give this zingy recipe a try! I went a little heavy on the vinegar - we are vinegar freaks! Per usual, I omitted nuts. Delish!

Pumpkin Cake II

VERY tasty and moist cake. I put raisins and walnuts. My dude would have preferred it without the raisins. I thought they were great. I've chopped the raisins in the past for other recipes to take away the little pockets of raisin texture so I'll do that next time for this. I served it with fresh whipped cream and crystallized ginger. I have a feeling that this would make fabulous muffins. This has a very strong pumpkin flavor (which I lurve). If you don't love pumpkin then keep recipe searching.

Boiled Peanuts

I love them right from the pot! The salty goodness is addicting! I like to taste test the boiled nuts before turning off the burner - these are not fussy so you won't ruin them. Nothing like standing at the kitchen sink eating fresh boiled peanuts with friends or family ...to be washed down with a cold beer of course!
