Panzanella Salad (Bread Salad)

super easy and very yummy! I did not have roma so used ordinary beefsteak tomatoes. dropped the oil down just a bit and followed the rest to the letter. Mixture of the ingredients presents very well.

Caesar Salad Supreme

This is true to its name...s supreme Caesar! I only made 2 modifications..used 3 instead of 5 anchovies, and tossed the ingredients in the food processor. SUPER simple doing it that way. I tasted it to determine need for more s&p right after it was processed, and found the flavors to be a bit too subtle. But once dressing sat in fridge while I prepared the rest of dinner, WOW did they intensify. I will start the dressing even earlier next time to allow it to rest in the fridge longer. If you're pressed for time, you can certainly use store bought, high quality croutons, but my family just loved these from-scratch ones. Can't wait to try this one out on dinner guests!

Awesome Slow Cooker Pot Roast

amazingly easy recipe and probably one of the best slow cooker roasts I've prepared. Very tender...I cooked a 3 lb roast just 8 hours on low. Because of the smaller cut of meat, I only used one can of cream of mushroom, 6 ounces of cabernet in lieu of the water, and the packet of onion soup mix. Just enough liquid to cover the meat and more than enough for serving. Meat was seasoned with freshly ground black pepper and was good to go!

Gourmet Mushroom Risotto

This receipe makes an amazing risotto. SOOOO creamy and rich. When 2 different markets were BOTH out of portobellos!, I decided to substitute 1/2 lb bay scallops and 1/2 lb med. shrimp. I sauteed them in 2 T olive oil and set aside as called for with the mushrooms. The only other tweaking was to use 2 T of butter instead of the 4 and it was still extremely rich. Certainly a keeper and thanks for submitting the recipe!

Roasted New Potatoes

This is simple, yet yields wonderful results. I tried it with purple potatoes (got them at Sprouts), and they lend a touch of sweetness to the end result. They are just too cute, too! If using the purples, I would check for doneness ahead of schedule as mine cooked more quickly than expected. Making them again for Easter dinner as I think the purple color would lend a festive touch to the table!

Quinoa Tabbouleh

This was a wonderful, light meal for a hot day! I was about 2 tbsp shy on the lemon juice, so I went 2 tbsp less on the oil. That, coupled with draining the chopped tomatoes, gave it just the right amount of liquid. We are garlic lovers so I added 2 small cloves of crushed garlic. Otherwise, followed to the letter. I think I may try it with some fresh mint next time, but had none on hand. Used Italian, flat leaf parsley. This is a keeper as I'm always looking for meat-free items for Friday during lent. Thanks for posting!

Guacamole

Super-easy and Wonderful guacamole. I left it nice and chunky and the texture is perfect for chips. I followed to the letter and really do not see any changes that I would make for the next batch. Tastes even better the next day!! Can't imagine buying store-bought again as this is just so easy.

Ultimate Spicy Spud Soup

We LOVED this recipe as it is so close to our favorite Olive Garden soup...Zuppa Toscana. To acheive the right amout of liquid for our taste, I used 8 cups of chicken broth with the suggested ingredients. Since I used hot italian sausage, I did not use the cayenne, but had crushed red pepper flakes at the table if anyone wanted added heat. I also chopped up a small buch of kale to make it even closer to the restaurant recipe. I'm so glad i foudn this one as it is definitely a keeper for us!

Chicken Garlic Pizza

Everyone loved this pizza, and I even forgot to add the parmesan! Can't imagine how good it will be when I add it next time. I did double the garlic butter mixture, but other than that, followed to the letter. It did need to be baked a bit beyond the stated time as the crust was not nearly done when first checked. This one is certainly a keeper!

Italian Summer Squash Polenta Bake

Made this last night and everyone loved it. My only problem is that I HATE to fry. I will try to think of another way to prepare the polenta prior to baking. The flavors all meld well together while in the oven. I did substitute fresh garlic and sea salt for the garlic salt but that was it. Will certainly make this again.

Grilled Halibut with Cilantro Garlic Butter
