Caesar Salad Supreme
This is true to its name...s supreme Caesar! I only made 2 modifications..used 3 instead of 5 anchovies, and tossed the ingredients in the food processor. SUPER simple doing it that way. I tasted it to determine need for more s&p right after it was processed, and found the flavors to be a bit too subtle. But once dressing sat in fridge while I prepared the rest of dinner, WOW did they intensify. I will start the dressing even earlier next time to allow it to rest in the fridge longer. If you're pressed for time, you can certainly use store bought, high quality croutons, but my family just loved these from-scratch ones. Can't wait to try this one out on dinner guests!

Awesome Slow Cooker Pot Roast
amazingly easy recipe and probably one of the best slow cooker roasts I've prepared. Very tender...I cooked a 3 lb roast just 8 hours on low. Because of the smaller cut of meat, I only used one can of cream of mushroom, 6 ounces of cabernet in lieu of the water, and the packet of onion soup mix. Just enough liquid to cover the meat and more than enough for serving. Meat was seasoned with freshly ground black pepper and was good to go!

Gourmet Mushroom Risotto
This receipe makes an amazing risotto. SOOOO creamy and rich. When 2 different markets were BOTH out of portobellos!, I decided to substitute 1/2 lb bay scallops and 1/2 lb med. shrimp. I sauteed them in 2 T olive oil and set aside as called for with the mushrooms. The only other tweaking was to use 2 T of butter instead of the 4 and it was still extremely rich. Certainly a keeper and thanks for submitting the recipe!
