Fried Onion Rings

Following the batter instructions left me with a very thick, chunky batter. Wasn't sure if adding more beer would be a wise idea so I just diluted it with water. After tasting the first batch I wasn't super impressed. Added extra salt (probably a total of 1.5 tbs) and the second batch came out delicious.

Classic Macaroni Salad

Love this macaroni salad. I leave out the carrot, onion, and pimento peppers. I also add in a sprinkling of Season Salt and substitute green pepper for red. Delicious! Best macaroni salad recipe I have found yet!

Stuffed Peppers with Turkey and Vegetables

In trying to eat healthier I tried this recipe as well as ground turkey for the first time. Used 97% fat free turkey. While browning the turkey I seasoned with fresh cracked pepper and kosher salt. Came out great! I didn't precook my peppers to cut out some time and it was just fine. Baked for about 45 minutes then topped with a touch of low fat shredded cheese. Baked an additional 10 minutes and then we devoured. Very tasty!

Mother's Pot Roast

Recipe is amazingly delicious as is. Only change I made was I seasoned the meat with salt and pepper before placing in slow cooker. I used an eye round roast as it was on sale and I know it is a nice tender piece of meat. I also added some minced garlic and an extra bay leaf.

Autumn Spice Ham Steak

Amazingly delicious. I was afraid it would be too sweet, but it really wasn't. I had pre cooked ham streaks. So to alleviate on some calories/fat I grilled them using my grill pan to heat them. Then added them to the pan with the cooked apple/syrup mixture. Cannot wait to make it again.

Brownie Biscotti

Yummmmmy! First time I made them I overbaked them the second time. Oops. Every time I have made it since I only bake an additional 2 minutes per side and they come out perfect.

Amish Slaw

I didn't like the taste of the mustard in this slaw. But I loved the fact that it didn't use mayo. To cut the taste of mustard I added in about a tablespoon of balsamic vinegar. Really made a difference for me.

BBQ Pork for Sandwiches

AMAZING, AMAZING, AMAZING! I used a pork shoulder versus ribs. Cooked in slow cooker on high for 1.5 hours then on low for 6. Pulled apart nicely! Used have Sweet Baby Rays BBQ sauce and half Jack Daniels Original BBQ sauce. Cannot wait to make it again for the Superbowl! (FYI - I used the leftovers for Pork Empanadas, yummm!)

Butternut Squash Soup

Had a nice taste with the changes I made. I used chicken stock versus bouillon and water. I added 2 sliced apples. Since I didn't have morjoram I used allspice. And used 1 8 ounce package of low fat cream cheese. Soup was good. But I used the leftovers as a sauce over rigatoni pasta and that was DELICIOUS! Thanks for sharing.

Braised Balsamic Chicken

Delicious! My husband couldn't get over how simple and tasty this recipe was. I used 1/4 cup balsamic just to ensure my 18 month old would eat it. I was afraid it might become to vinegary. Reheated nicely as well. Would definitely make again!

Pesto Cheesy Chicken Rolls

Great recipe. I sprinkled one side with fresh ground pepper, little salt, and garlic powder. On the inside I spread pesto and sprinkled shredded mozzarella cheese. Rooled it up, secured with toothpicks. Sprinkled outside with Italian flavored bread crumbs and a touch of Olive Oil. Bake time certainly needed to be reduced to about 25 minutes but that most likely varies depending on the thickness of the chicken. DH loved it and asked if this could be added to our "regular" rotation!

Honey Chicken Stir-Fry

I thought this was a really simple dish to make and had great flavor. DH loved it too. I served over brown rice which I cooked in chicken stock versus water for added flavor.
