I'm almost a college student (taking a year off before I jump in!) and I discovered since getting near a kitchen after 4 years of boarding school that I LOVE to cook! Luckily my mom hates it, so I get to do all of it now that I'm living at home. I'm the only vegetarian in my family, but I refuse to go near meat, so they stay vegetarian when I'm around.
My favorite things to cook
Chocolate chunk cookies! Anything I can saute in a pan. Morningstar Veggie Corndogs - toss them in the microwave and munch away!
My favorite family cooking traditions
My dad makes killer mashed potatos and cream sauce (not together). Other than that, my family tries to cook as little as possible. We tend to always get dinner on the table between 8-9 - we lead busy lives!
My cooking triumphs
Really, I make killer chocolate chocolate chip cookies. I can also throw any vegtable-mix in a pan over pasta and make it great. My roommates are impressed by my creative combining abilities.
My cooking tragedies
Once I tried making gnocchi from scratch. That was a mess. About 1 in 10 of my cooking experiments doesn't end well, and I'm learning more every day!

Black Bean and Artichoke Burritos
SO good!! It only took me a half hour, but I was mostly standing at the stove durning that time. I only got 3 large burritos out of it - I'll definitely double the recipe. I was surprised by how flavorful it was - it was truly delicious. I tossed some paprika into the beans and spinach in the artichokes, which was good. I also loaded on the salsa. Next time I don't think I will, because I like a dense burrito. Still, it was delicious, and really easy!

Mexican Casserole
I doubled this, made 2, and froze one for my family to re-heat later... I also added black beans and used about 2x as much stuff for each one. Don't want to know what the calorie count on tht was... It would feed 4-5 of us, there were leftovers. I added extra onion for a kick. It was delicious! A huge hit with my sisters.
