Catfish Etouffee

So easy! I've made twice with both Catfish and the second time with Shrimp/pre-cooked Sausage and it held up to both. My only substitions were to use canned diced tomatoes instead and for extra fiber, I added a can of red beans to the rice.

Stuffed Cabbage Rolls

I loved this! I substituted fake eggs, brown rice, and ground turkey and it came out delicious. I am a big fan of 1 pot cooking and this really made it. You can steam the cabbage over the rice and them simmer in the same pot after a quick rinse.
