Salsa Chicken

Reviewed: May 12, 2006
Yumm - so easy and great! I have spent so much more time in the kitchen and not had something as tasty. Made two smaller pans- spicy for us and mild for the kiddos - also added sliced black olives. Loved it!! Served with black beans, and flour tortillas. Use a good salsa for best results. Thanks!

Chewy Crispy Coconut Cookies

Reviewed: Jan. 19, 2009
I loved these cookies, really lived up to the title. Used Honey Bunches of Oats, chilled in fridge before baking so they would not spread as much. Added chocolate chips to half of the batch to try, good both ways- really great cookie- thanks!

Lemon Mint Cooler

Reviewed: May 13, 2006
One of my favorites! Very good on the rocks too- I let the lemonade and mint mingle all day and then add vodka and pour over ice - either way it says SUMMER!

Bacon and Tomato Cups

Reviewed: May 24, 2006
Well these were the hit of another party - and how can you not like these? I used far far less of the dough than called for. My pan had 24 spaces and I only used 1 7.5 oz can of biscuits. Used one large tomato, fresh basil, mixed blend of cheese, and some garlic powder to other ingredients. Also just scooped out some mayo to bind and I dont think it was the amount that was called for. YUMMY! I ate more of this than the main course! Thanks!

Cranberry Orange Loaf

Reviewed: Jun. 22, 2009
Came out great here- I read the recipe wrong and only had dried cranberries. But I searched and saw a lot of people had used them...delicious! Omitted the nuts, kids preference. Thanks!

Bob's Awesome Lasagna

Reviewed: Apr. 10, 2006
This was great- who knew lasagna could be so easy? Changes I made- one pound ground beef and one pound sausage, two bottles of Sauce, 1/2 and 1/2 mixture of ricotta and cottage cheese, more garlic, larger pan. I was worried about the cottage cheese because I dont like the texture but I could not taste it at all. Covered with foil for the first 30 min. Set up great for me. thanks!

I first tried this with extra pineapple per other reviews and found it way too sweet. Made again as written and was perfect. Made again and forgot what I was doing ;-)

Mozzarella Parmesan Chicken

Reviewed: Nov. 16, 2006
OK I gave this five stars because it is easy, I can make it ahead of time, and it is low fat. It is not a gourmet type item but very good for what it is - good family food. Mine looked nothing like the picture by the way. I used one of the low sodium/low fat soups and one regular soup. Added fresh sliced mushrooms, fresh broccoli, and more garlic, served with penne noodles. We thought it was good on a fall day - thanks! AND I usually do not like casseroles or such that are soup based!!

Orange Cake

Reviewed: Nov. 16, 2006
OH my! This was awesome! I agree it was more a general citrus flavor rather than orange, but was so good. Added some chocolate chips. Thanks to the previous reviewer who said to have the glaze sit and cool - I am new to glazing and this one came out the best for me. Thanks!!

Baked Ziti III

Reviewed: Apr. 26, 2006
Yum! Gosh this was easy and great. I used a mixture of sausage and ground beef, added garlic, and used my lasagna pan - all fit with plenty of room. I was concerned about the sour cream but it really just blends in. Thanks!!

Chicken and Bacon Shish Kabobs

Reviewed: Jun. 7, 2006
This was very good. I marinated about 8 hours, wrapped every third piece of chicken (we just wanted a little taste of bacon). Made a second batch of marinade for veggies and put the mushrooms on one skewer and the zucchini on their own...that is the way the grill master likes it around here, everything seperate ;-) Funny my kids love pinapple but would not eat it off the grill. Fresh definitely better. Thanks will use again!

Balsamic Chicken and Fresh Mozzarella

Reviewed: Jan. 12, 2008
We liked this! Good and easy! Hubby gave it the thumbs up. Did cut into tenders (4 breasts) - Marinated from breakfast to dinner with balsamic dressing (1/2 bottle). Cooked for 30 min on 350. Repeating like others, use FRESH mozzarella only!! I topped before serving with cheese, basil, then tomato, balsamic and S and P. Next time I may drizzle a little dressing on it, warmed up.

Dee's Roast Pork for Tacos

Reviewed: May 7, 2006
I used an oven bag instead of the foil. I also added cumin per some of the reviews and it overpowered it for me- I will still add some next time, but just a dash- was very easy! I love make ahead meals for my busy family!

Best Marinara Sauce Yet

Reviewed: May 12, 2006
I cooked up some sausage with onion and garlic then added all the ingredients (added Italian Seasoning v. just oregano and used Italian-style stewed tomatoes). Did not add the olive oil (why so much?) - did not run thru the food processor either (too busy or too lazy...hmmm)- simmered and then set on the stove during baseball practice and wahlaaa - came out great - my husband loved it! Also added fresh basil and served over penne. Thanks! Easy!!

Slow Cooker Swiss Steak

Reviewed: Oct. 29, 2008
This was very good for a throw it all in the pot and forget it meal, it was suprisingly good. Used one can of tomatoes, 4 med carrots in 1" chunks, 1/2 large onion, 2 large ribs of celery....bought mushrooms based on other reviews but did not add them. Just threw it all in there together (no oil and no browning). Cooked 3 hours on low, then added veggies and cooked 1 hour on high, then 2 hours low and it was done, turned to keep warm. Served with mashed potatoes and crusty rolls. Easy, affordable, and good. Thanks!
