Lemon Mint Cooler

One of my favorites! Very good on the rocks too- I let the lemonade and mint mingle all day and then add vodka and pour over ice - either way it says SUMMER!

Cucumber Sandwich

Shrimp Lemon Pepper Linguini

My husband and I thought this was good, but the kids only liked the shrimp and would not eat the sauce or the noodles, grrr (too much green "stuff" and lemon). Probably wont make again for a while because of that.

Cajun Seafood Pasta

Ok, I totally screwed this up...but it still came out good. I used fat free half and half, but then I kind of overcompensated when it did not thicken at all (like the recipe said the cream should)...so I added cornstarch. Then, when I added the cheese it turned to glue. Fortunately, I just added some more milk and it was OK. Sauteed some red peppers and mushrooms, plus garlic and onions seperately. I like spicy food and I would not add all of the red pepper flakes if I make again. I would use the ff half and half again I just would not add any thickener until after the cheese step (I also only added parmasan). Anyway my personal meal came out about a 3.5 star but I am sure with all the cheese and cream and following directions it would be a five. Thanks!

Outrageous Chocolate Chip Cookies

Yumm - great! Not too peanut buttery, I like a little more chocolate chips (used mixture of dark and semi sweet chips). Thanks for the suggestion to let sit for a few minutes before removing from tray. Make a double batch, they go quick!

Salsa Chicken

Yumm - so easy and great! I have spent so much more time in the kitchen and not had something as tasty. Made two smaller pans- spicy for us and mild for the kiddos - also added sliced black olives. Loved it!! Served with black beans, and flour tortillas. Use a good salsa for best results. Thanks!

Best Marinara Sauce Yet

I cooked up some sausage with onion and garlic then added all the ingredients (added Italian Seasoning v. just oregano and used Italian-style stewed tomatoes). Did not add the olive oil (why so much?) - did not run thru the food processor either (too busy or too lazy...hmmm)- simmered and then set on the stove during baseball practice and wahlaaa - came out great - my husband loved it! Also added fresh basil and served over penne. Thanks! Easy!!

Red Rooster

This is one of our favorite drinks but we call it a "Madras". The OJ cuts the tartness of the cranberry down a bit.... a doodleedoo!!!! update: lol they edited out my rooster call for foul (fowl?) language!

Baked Teriyaki Chicken

My family loved this, but I am only giving 4 stars because I think the cooking temp (or cooking time) is too high! I cooked 6 thighs and 6 legs at 375 for one hour - perfect. I doubled the sauce and used Splenda instead of sugar. Was a big hit and would be good on pork chops or salmon too!

Dee's Roast Pork for Tacos

I used an oven bag instead of the foil. I also added cumin per some of the reviews and it overpowered it for me- I will still add some next time, but just a dash- was very easy! I love make ahead meals for my busy family!

Lime Chicken Soft Tacos

Wow - this was great! I cut the chicken up first, doubled the sauce and then let it marinate for a few hours - then saute'ed the chicken, removed, added the marinade and boiled for couple min to be safe, then re-added chicken with cilantro and green onions and simmered for a couple- yumm!! I think this is best when kept simple, just tortilla, chicken, shredded cheese, avocado and some hot sauce - does not need all the fixings unless you want them. BTW: my kids did not like all the "green stuff", next time I will take some chx out for them before adding the cilantro/onion - much easier than hand picking off chopped cilantro!! ugh - Thanks!

Kathy's Roast and Vegetables

This came out good, but was too salty for us! Used a chuck roast - added celery and the other veggies with about 3 hours to go - and then frozen peas in the last half hour. Maybe use no salt soup? By the way, I am usually not a fan of recipes using canned soup but the gravy did come out good and my husband liked it. Not sure if I will make again yet.

Mahogany Chicken Wings

I used chicken thighs and served this with rice and green beans. Great- dh really liked it. Next time I would thicken sauce with some cornstarch and serve over chicken - would be five stars for me if stuck a little better, kind of ran off a bit. Thanks - will use again!
