Cranberry Orange Loaf

Came out great here- I read the recipe wrong and only had dried cranberries. But I searched and saw a lot of people had used them...delicious! Omitted the nuts, kids preference. Thanks!

Broccoli Cheese Soup

OK I totally changed this but it was perfect for us. Used one half an onion and only a couple T butter. Used package of frozen borccoli cuts. Added 2 small carrots sliced small and followed directions. Then I used immersion blender to mix until just a few chunks around. For cheese used 1/2 loaf Velveeta and 2c appx shredded mild cheddar. Simmer and stir, I was watching and still slightly burnt bottom. Used 2c half and half, next time start with 1.5 c and see if that is enough. There were a few small chunks of cheese that would not melt so I used the blender again and added pepper...perfection! No need for extra water and cornstarch, when you blend the veggies it provides the thickness! Forgot the garlic...my family loved this. Thanks for the great base!

Meatball Sandwich

This is for the meatballs only- mine came out too dry and too bland. Needed salt and pepper and a few minutes less cooking time. Used 90/10 meat and followed directions exactly. I like baking them though instead of frying, will adjust and try again.

Baked Paprika-Parmesan Chicken

This came out great! I cut the chicken into strips and then cooked for 25 minutes at 375. Next time I would cut the butter back a Tablespoon or so. Thanks!

Spicy Peach-Glazed Pork Chops

This was very good, cut down on spice bc of the kiddos. Used apricot instead of peach because I had it. The only thing was mine overcooked and I did not go the full 8 min on each side- too long?? I think next time I would simmer the sauce down a few minutes before adding the chops and then just 2-4 min per side in the sauce on low would be good. Good recipe with pantry items!

Classic Peanut Butter Cookies

Well this was a good base. I would make again but with my changes...I made as stated for 9 cookies but they were too crumbly for me and not peanut buttery enough. I added a 1/2 c peanut butter (used organic chunky), 1/2 cup flour, 1/4 c sugar, and another 1/3 stick butter. I did chill too. I also baked at 350 for 13 min on an airbake sheet (longer then a normal cookie sheet) Perfection! Made a lot- might cut in half next time- made 50 good size cookies (I did add to the mix). oops I added a capful of vanilla too!

Rich and Creamy Tomato Basil Soup

Thanks, this was fabulous. I did use half of the amount of cream and butter and was very happy. I did not peel the tomatoes(just seeded) and then used my immersion blender. Served with paninis- a bit hit with the whole family!

Chewy Crispy Coconut Cookies

I loved these cookies, really lived up to the title. Used Honey Bunches of Oats, chilled in fridge before baking so they would not spread as much. Added chocolate chips to half of the batch to try, good both ways- really great cookie- thanks!

Fantastic Gorgonzola and White Wine Cheese Ball

Yumm I think this is great! Giving four stars because I did double the gorgonzola. Lots of flavor and perfect with wine. Used chardonay and make sure to use salted pistachios- a hit- and festive too.

Slow Cooker Swiss Steak

This was very good for a throw it all in the pot and forget it meal, it was suprisingly good. Used one can of tomatoes, 4 med carrots in 1" chunks, 1/2 large onion, 2 large ribs of celery....bought mushrooms based on other reviews but did not add them. Just threw it all in there together (no oil and no browning). Cooked 3 hours on low, then added veggies and cooked 1 hour on high, then 2 hours low and it was done, turned to keep warm. Served with mashed potatoes and crusty rolls. Easy, affordable, and good. Thanks!

Balsamic Chicken and Fresh Mozzarella

We liked this! Good and easy! Hubby gave it the thumbs up. Did cut into tenders (4 breasts) - Marinated from breakfast to dinner with balsamic dressing (1/2 bottle). Cooked for 30 min on 350. Repeating like others, use FRESH mozzarella only!! I topped before serving with cheese, basil, then tomato, balsamic and S and P. Next time I may drizzle a little dressing on it, warmed up.

BLT Dip

I thought this was a good starting base - added a chopped green onion, used more tomato and let it drain on a paer towel for a few hours, added pepper, and let the whole dip sit in fridge for 8 hours. Definitely needs to meld to soften bacon and to intensify the flavors. Sprinkled the top with some more tomato and green onion and served with Ritz and celery sticks - was a hit! Thanks!!

Easy Iced Coffee

I liked this OK with coffee but I LOVE it with instant Caffe D'Vita Mocha Cappucucino. Just what I was looking for- too hot to drink brewed coffee right now. I doubled the recipe, poured over tall 16 oz glass of ice, added milk to top. fabulous! Thanks!

Yumm, how can you go wrong? I do think that next time I will pass on the bacon though- it just does not need it. Perfect with our steaks and easy (as long as you have a mandolin). Thanks!
