Scottish Shortbread IV

This is simple and great. I separated it into two balls and flavored one with orange flavoring and the other with almond. I dipped both in chocolate and put some grated orange peel on one and a single almond on the other. I took it to a food day at work and had raves and at least a dozen requests for the recipe. This is the simplest recipe I have ever used for a food day and the most requests for a recipe.

Forgotten Cookies II

Wonderful cookies. Have won several baking contests at work. (Thank you DoGirl) I have tried them with dried fruit and people raved. Tried just nuts, just chocolate, almost anything that is not too wet. Two cautions. USE PARCHMENT PAPER. Important for the bottom. Also they neither expand or shrink so make them bite sized. If too big, they will not dry and your bottoms may just fall off. Could not ask for a better cookie.

Dish Pan Cookies

I made these for the office and found that they were some of the best cookies most of my co-workers had ever eaten. I got raves for them and at least a dozen people asked for the recipe. I have been told I must make them again. A couple notes when you make them. First, they are very crumbly and dry when you put them on the baking sheet. Don't worry, they rise a little and get chewy and are not dry. Don't worry about the lack of butter, but use a good quality of oil. Also, I tried the time at 10-14 minutes but had to cook 17-18 to get them to brown.

Apple Hermits

These are a very good autumn cookie, but I cannot give them a 5. They are a tasty oatmeal type (though they have no oatmeal) cookie. For those who say it is too sweet, you need a life! If anything, without the glaze, they are not very sweet at all (though I suppose that depends on the apples and rasins to a degree). To get them to better stick together before cooking, I pulsed the nuts and apples in my food processor until they were fairly well chopped and that did work well.

Baklava

This is excellent. I made one mistake though in using too many nuts. The idea is that there will be enough of each layer in contact with the one below so that it seals together. When I put on too much nuts, I got layers that separate. Still wonderful, but....
