Cream Cheese Squares

This is not easy if you are trying to make these with cold cream cheese and not electric mixer..So either get the cheese to room temp or use a mixer. My arm about fell off. Anyway these were very easy, but extremely rich(and have trans fats). Good, but most likely won't be making again.

Authentic Enchiladas Verdes

These are to die for. Very easy and so pretty. This is def. something I would be proud to cook for guests. I made it veg. by skipping the first steps and using vegetable broth and using morningstar griller cooked in the George Forman grill cut into strips. I have actually made this twice now and will make again in the future!

Vegan Red Lentil Soup

I loved loved loved this. The ginger makes it fabulous. The only slight changes I did make were to use light coconut milk, garam masala instead of curry, and fingerling potatoes instead of squash. Served it over rice. I will be making this again(when I can find red lentils)!

This is a very very strong recipe and I don't think I EVER say that. It is very pretty and a nice starting place. Maybe add a cup of peas? Or some cream to mellow it down? Either way def. give this one a taste before serving it up.

I would give this 3.5 stars if I could. It was not terrible, but it just wasn't on the money, could have been better. I have eaten something like this at a brunch before and it was much better. But I did eat it so it wasn't horrible and it def. is an inexpensive recipe that makes a very large quantity.

This was so good, easy, and pretty. I did have a lot of filling left over that I had to throw out b/c it did not fit in the 2 wrappers :( So maybe make less or make 3 instead of 2. Also as a general rule don't brush too much egg on. The flavors are somewhat delicate and you don't want the strudel to taste like a fried egg.

Red Pepper Chimichurri

Used this for arepitas topped with queso fresco! Yum, que rico! I did use 2 chipotle peppers in adobo sauce instead of the pepper flakes and left out the vinegar since some don't like it in my house.

This was good, but I warn, do NOT use no-boil noodles. You will have a hard mess on your hands. I still gave it 5 starts because it would have been perfect had I followed the directions - lesson learned.

Sugar Glazed Walnuts

These were awesome. I cooked them in the oven b/c I don't have a microwave and the nuts were great. I made 2 batches, and on one I added some ground ginger and cinnamon which were extra good.

Baked Tofu Bites

I was pretty disappointed at how this turned out. But, after they came out of the oven I didn't like the flavor so I mixed them in a little more maple syrup. I forgot about it until the next day and tried it again. The tofu was def. better the next day.

Coconut Rum Balls

These were awesome! I love making rum balls, they are just as yummy as cookies but a lot easier. First I made the chocolate rum balls from allrecipes and they were so good I made more along with these. I think the coconut rum balls were a little better than the chocolate ones. But, I love white chocolate and these had more of a white chocolate flavor to them. After I made them I rolled some in toasted coconut, some in powdered sugar and some in melted white chocolate chips. I would not recommend dipping them in the chocolate, it made them overly sweet. I will definitely make these again come Christmas time as gifts.

Easy and tasty mac n cheese. I followed the recipe as written, but used penne b/c I did not have elbow macaroni. I loved the idea of using liquid smoke!

Apple Pie by Grandma Ople

This is not the best apple pie ever. But, it was still good. I thought I really screwed it up at first. I made the lattice crust as suggested and when assembled, I poured the sauce over the top. Only problem was that it had gotten too thick and turned into caramel! It was not draining down. I added another cup of water and heated it up again but it would not un-thicken. It worked out ok in the end but not ideally. I would definitely suggest following other reviews advice of mixing the apples and the sauce together, then brushing the sauce on top.
