Cake Mixes from Scratch and Variations

This is a great recipe. I have used it twice now to make the yellow cake mix. I made cupcakes and the Irish cream cake. Came out well both times and I subbed butter for the shortening.

Wow this was amazingly good. It was so nice and thick and hearty! I will for sure be making this again. I did reduce the pb a tiny bit as a personal preference, but its not necessary. A must try.

These were good, but the first day they tasted like blueberry cupcakes and not like muffins at all. The next day they did taste more like muffins. I did go ahead and double the recipe and double the amount of batter in each muffin cup. I did not double the crumb topping however and there was plenty.

Clone of a Cinnabon

I'm sorry but this was NOT a Cinnabon. I'm not sure if this was a reflection of my baking skills, or the recipe but they were just ok. I had never made cinnamon rolls before, and they were fine but not something I would make again.

Curried Popcorn

This was delicious. I would recommend it if you like trying new popcorn toppings. I can't believe someone would use peanut oil instead of coconut and then give this a bad review. They are to totally different oils with very different flavors.

White Chocolate Raspberry Cheesecake

The best cheesecake I have EVER had. It was really pretty too! I added 1/4c cornstarch to the batter so that it wouldn't crack, b/c I didn't have a pan big enough to fit my springform pan in. Turned out great.

Cookie Balls

These were surprisingly easy, especially if you use a food processor and mixer. They taste great and I would make them again. Also if you need to warm up the cream cheese heat it in the oven for 10 min at 200 degrees.

Apple Crisp II

This reminded me of "All you can eat buffet" apple crisp, which isn't necessarily a bad thing. My man loved it, but it was wayyyyy to sweet for me. I wouldn't make this again.

Ten Minute Enchilada Sauce

Basic Truffles

I made 2 batches of the truffles- one I followed as directed in the recipe, and the other I added a little butter and rum. I have to say I was not all that impressed. They did get eaten, and it was a good way to use up the bitter-sweet chocolate I bought on accident(somehow I thought it was white chocolate). Sadly, I much prefer the large package of truffles from Costco. They are way better and probably cheaper.

Gnocchi in Fontina Sauce

The sauce was extremely rich, but it was not perfect. Fontina cheese is fairly pricey and I think i would have gotten more enjoyment from eating it on crackers or in an omelet. Won't be making again.

Lentil Quiche

Quick and Easy Home Fries

These are exactly as described: quick and easy. Oh more importantly really delicious. I sprinkled mine with salt, pepper, and red pepper flakes (aka pizza heat). So good, and I have since made them 2 more times.
