Easiest Ever Fish Marinade

After reading reviews where people said it was too salty, I added a little honey so try and counter that. At the end of the day it was just fish, nothing special about it.

Artichoke Spinach Dip

This was a great recipe to start with. I used a lot of suggestions from others and put my own twist on it. I did roast garlic, then saute it in the butter. I added the artichokes and lemon juice to that, then put that in the slow cooker with 16 oz. of cream cheese (fat free). I used 16 oz. of spinach instead of 10, and 1 container of sour cream, but later added a little mayo and Lactaid. After heating thoroughly I added a little more lemon juice, chili powder and paprika (just a sprinkle!), and 21-spice salute from Trader Joe's. It only took 6 people to kill the crock pot-full, and they couldn't stop talking about how great it was! (Four of the people are into Spin-Art dip in a big way, two are foodies - I couldn't stop patting myself on the back :))

No Bake Pumpkin Pie II

I made this with a class of children, and they all loved it! We used a graham cracker crust instead of the regular pie crust - it was a hit from beginning to end.

Mom's Best Macaroni Salad

This salad received many compliments when I brought it to a picnic. I did not add the sugar - the sweetened condensed milk made it plenty sweet. I did add leftover lemon asparagus that I had in the fridge.

Lemon Asparagus

Roasted Broccoli

This was fantastic! I used frozen broccoli and frozen bell pepper medley, didn't have the seasoning but tossed the veggies with EVOO, chili pepper and garlic salt. I will definitely be making this again, and experimenting with veggie combinations.

Zesty Slow Cooker Chicken Barbecue

This recipe was great, everyone at my cookout enjoyed it. One quote I loved was "This chicken is off the hook." I made a double batch to feed everyone, and had two different barbeque sauces - Jack Daniels and K.C. Masterpiece. I probably added a bit more Worcestershire sauce than the recipe called for, but other than that I followed it exactly.

Apple Kuchen

I loved this and so did my friends. The first time I made it, I used walnuts instead of coconut in the crust, as suggested by someone else. I also cut back on sugar and it was still really sweet. The second time I made it, I still used walnuts, and I added a bit of nutmeg and vanilla to the egg and sour cream mix. It went over great. I also made the pear, with pecans instead of coconut (still used the yellow cake mix). There were no leftovers and rave reviews from everyone (half the group grew up in Germany, so it was high praise, indeed)

This was a good addition to my Thanksgiving meal. I added ginger and cinnamon, and it all went over really well. Then I used the leftovers to make carrot bread - no additional spices needed!

Asparagus with Brie

I had to omit the sesame seeds, as I didn't have any on hand. And next time I make this, I'll probably use more asparagus. But the boyfriend and I were pleased to find a way to eat brie without crackers, so thanks!

Barlow's Blackened Catfish

This was good! I never follow recipes exactly, though, so there were a few changes made to the original. I used a tad more garlic powder (we love garlic here), and cut down on the cayenne. I also added blackened seasoning and old bay to make up for lack of cayenne. It turned out great.
