Butternut and Apple Harvest Soup

Green Bean Casserole I

I made this for Thanksgiving, and I was really pleased that the recipe was so easy after a whole evening of cooking. However, it was not a big hit at the family feast. Prior to eating, the dish needed to be reheated after traveling, and I think my host left it in the oven too long. I thought it tasted fine, but there was quite a bit left after dinner. I think it was more a matter of preference than the recipe not being tasty. I did read a few reviews and decided to substitute 1/2 cup of sour cream instead of milk, and I used one 16 oz bag of frozen french-style green beans. I will most likely give this recipe another try and just make sure to serve the dish right away.

Crescent Dogs

I made this last night for my boyfriend and I for dinner. I made his with cheese, and mine without. First off, I was using hot dogs from the freezer (as I hadn't read the recipe before hand) so the dogs needed to be defrosted before cutting the slits for the cheese. I also found it very difficult to insert the cheese into the dogs. Because of this I ended up using far less cheese than called for. I had more crescent dough than I needed for the hot dogs, so I made a few rolls on the same pan. My boyfriend enjoyed his hot dogs with the cheese, and I found mine to be mediocre (but by no means was I expecting some new gourmet revelation). I'm not sure if it was the brand of hot dog, the method of cooking, or the dough wrapped around them, but our dogs were a little too juicy for our taste. However, for a quick and easy dinner this was a decent choice. I will probably make this again in the future, but would use defrosted hot dogs and probably cut a few more slits to allow some of the liquid to burn off easier. We served these with crinkle cut fries and homemade honey mustard sauce. All in all, this was good enough to give it one more shot, and I'm sure a great choice for busy mom's or a dinner-on-the-go.

Hungry Man's Baked Chicken

I added a few more spices to the chicken (dash of ground sage and paprika), and used onion and garlic powders instead of fresh. The chicken turned out AMAZING! This is by far the most delicious way I've baked chicken. The aluminum foil is a great idea, as it really allows the spices to infuse into the drumsticks. I would probably take the foil off the chicken 5-10 minutes earlier in the future because I like my drumsticks a little crispier, but they were still fabulous. Also, I used kosher drumsticks, which I have found to be juicier. Great recipe, and I will definitely be making this again soon!!

Hummus III

This recipe is fantastic. I read a few reviews and decided to use about 1/5 cup of tahini (I'm not a huge fan) and a little extra paprika. However, I made the mistake of adding 3 fresh cloves of garlic and, although I LOOOOOOOOVE garlic, it was a little too much. I'm making falafel for dinner and I think, despite my overabundance of garlic, it should be a nice pairing. :)

Real Hummus

This is a great basic hummus recipe. I added more garlic (about 2.5 tbs) because I like a real garlicky hummus. Also, I noticed that the longer it sits in my fridge, the better it gets. :)

Quick and Easy Alfredo Sauce

I made this last night on a whim (I've been meaning to make it for about 2 years). I just so happened to have all of the ingredients in my kitchen. I scaled this down to two servings (which really is about 3 or 4) and used a little less than 1 cup milk, about 3 tbs butter, 3 tsp minced garlic, and a about 3 ounces of cream cheese - I wanted to make as little as possible. It turned out FANTASTIC. In the end I added a LOT of ground black pepper, but that's just how I like my alfredo. I was so surprised at how tasty this recipe was, expecially since the main ingredient was cream cheese! I will defninitely be making this again!

Deviled Eggs I

I thought this recipe was perfect for what I wanted - something simple. I'd never had a deviled egg, and wanted to try them. I omitted the paprika, because I didn't have any, and added a splash of vinegar, some salt and pepper, and a pinch of garlic powder. I also used prepared mustard based on previous reviews' recommendations. Yummy!!

Roasted Garlic Peppercorn Sauce

LOVED this recipe. The only reason I gave it 4 stars instead of five is because I made it with 1/2 lb of whole wheat pasta and only 2 servings of the sauce. I probably need more and the pasta absorbed a lot of the sauce. It was not as flavorful as I had hoped. It was so easy and tasted great in the pan, so I'm trying it again tonight! Definitely worth the little effort required!

Garlic Butter

I made a large batch of this recently to go over whole wheat pasta. I needed to get my 12 year old brother to eat it, and he LOVES garlic. We both really enjoyed it! I saved the leftover sauce and used it to make shrimp scampi a few nights later. Again, it was delicious!
