Stuffed Leg of Lamb

Made this last night and served it with mashed garlic potatoes and baby spinach. It was very tasty. I used the goat cheese roll suggestion and didn't have any pine nuts so I substituted chopped walnuts, it worked just fine. My husband who is not a lamb lover thought it was delicious.

Mushroom Pie

This was excellent! Only change I made was to add 1 cup chopped red peppers to the saute. As I didn't have any puff pastry, I used regular pie crust. Very tasty.

Black Bean Salad

My grandkids love this salad (finger food). I use Newman's Own Lime Vinagrette salad dressing and add chopped dried mangoes to the salad. Delicious!

Marzetti® Hawaiian Slaw

I got raves when I made this for a 4th of July get together. I followed the recipe including the Marzetti dressing but I used a whole can of drained crushed pineapple. I continue to get requests for the recipe.

Cajun Crawfish and Shrimp Etouffe

This was very good. I took some others advice and used 1.5 lbs jumbo shrimp and omitted the red pepper flakes and reduced hot sauce to 1/2 tsp. It still had some heat and my family loved it and I will definitely use this recipe again.

Irish Soda Bread

Very moist and tasty and it makes a large loaf. I only had two cups of raisins so I added 1 cup of craisins to the raisins. My husband and family raved about how good it was, not dry at all...

Antipasto Salad

This was a big hit at our family party, kids as well as adults loved it. I made it with pasta and added 8ozs of Asiago cheese, 1/4 pound pepperoni, 1 cucumber and 1 cup carrot chips. It makes a huge salad. Will defintiely make this again and again.
